THE BEST APPLE PUDDING
This is my favourite apple dessert. This recipe came from my mother and we had this many times growing up. Use enough apples to generously cover the bottom of the dish. So Yummy!

Steps:
- Slice peeled apples into a greased 8x8 baking dish; sprinkle with cinnamon.
- Cream shortening, sugar and egg together; then add milk alternately with dry ingredients.
- Add vanilla.
- Spread over apples.
- Combine all sauce ingredients and boil for 5 minutes.
- Pour over batter and bake 35- 45 minutes at 350.

A recipe that was handed down through the years from Mother to Daughter. It's just a simple and easy 'Apple Pudding' recipe. When you are in a hurry and have very few staples on hand, you may want to give this dessert a try. That is the basic recipe and good for the times of depression when extras are scarce. Serve either hot or cold. It is good plain but better with milk, cream, whipped cream or lemon sauce.

- Preheat oven to 325 degrees F (165 degrees C).
- Toss apples with flour, sugar and salt and place in a 9x9 inch baking dish. Pour enough milk into dish to come almost to the top of the apples, but not cover them.
- Bake in preheated oven 45 minutes, until apples are tender.

- Preheat oven to 375 degrees F (190 degrees C).
- In a small baking dish, combine butter, sugar, flour, baking powder, salt, and milk until smooth.

APPLE BATTER PUDDING
This is much nicer than it perhaps sounds, its proper stick to your ribs material and makes a quick cheap supper time pudding, it is in fact a sweet type of Yorkshire pudding. The golden syrup and evaporated milk are essential if you want the full experience especially as the pudding itself is not very sweet. Old fashioned pudding goodness mmmm!

- Preheat the oven to 220C/425°F.
- Make the batter by sifting the flour into a bowl with the salt, make a well in the centre and add the beaten egg and half of the milk.
- Whisk for a minute or two until no lumps remain then stir in the rest of the milk.
- Put the cooking fat into an oven proof dish and heat in the oven for 5 minutes.
- Working quickly, spread the apples evenly in the dish and pour over the batter mixture.
- Bake for 30-40 minutes until browned and well risen.
- Serve immediately with lashings of syrup and evaporated milk.
- Tip: Place the jar of syrup in a bowl of hot water and it should be easier to manage.

STICKY TOFFEE APPLE PUDDING

- Heat oven to 180C/fan 160C/gas 4. Grease a 2-litre/3½-pint ovenproof dish lightly with butter. Tip the flour, sugar and baking powder, along with a pinch of salt, into a large bowl. Mix together the milk, butter, egg and vanilla extract and stir into the dry ingredients until you get a smooth batter. Arrange the apples in the dish, spoon the batter on top and smooth with a knife until the apples are covered.
- For the topping, pour 250ml boiling water over the sugar and stir together until smooth. Pour the liquid over the pudding mixture, then scatter over the pecans. Bake for about 40 mins until the pudding has risen and is golden. Use a big spoon to serve the pudding, making sure you get some of the gooey caramel sauce covering the bottom of the dish. Serve with pouring cream, warm custard or vanilla ice cream.

SIMPLE AND QUICK APPLE PUDDING
This is one of my Mom's recipes and one that both Dad and I really enjoyed. Always looked forward to the fall and apples from MacIntosh tree out back! Sometimes Mom called it Apple Pudding other times she called it Apple upside-down cake, either way it was a cake texture with baked apples and a carmel type sauce. Always a treat to come home from school and smell this in the oven! Serve it warm as is or with vanilla ice cream!

- Place apples in 2 litre casserole dish. Sprinkle with the cinnamon.
- Cream butter and sugar then add the next 6 ingredients and mix well. Spoon over apples.

- Heat oven to 240C/fan 220C/gas 9. Heat the butter and 100g of the sugar in a frying pan, throw in the apples and cook over a high heat for 3-4 mins until slightly caramelised and just starting to soften. Set aside.
- In a clean bowl, whisk the egg white until frothy, then whisk in the rest of the sugar, the whole eggs, the flour and the milk. Stir the apples and the blackberries into the batter.
- Place a 6-hole non-stick Yorkshire pudding tin over a high heat and add a splash of oil to each hole. Spoon a large ladleful of batter into each hole, making sure all the fruit is used. Put the tin in the oven and leave for 15 mins, without opening the door, until puffed up and golden. Remove from the oven and carefully place each pudding onto a plate.
