  • Preheat oven to 450F.
  • Line a baking sheet with aluminum foil and spray with cooking spray.
  • Slice potatoes in half, then cut into 1/2 inch cubes.
  • Place potatoes in a medium bowl and toss with oil.
  • Combine Parmesan, paprika, garlic powder, salt, black pepper,and cayenne pepper in a small bowl.
  • Add the Parmesan mixture to potatoes in bowl; toss to coat potatoes evenly.
  • Arrange potatoes on prepared baking sheet.

  • Set the oven to broil at 425 degrees F (220 degrees C).
  • In a small saucepan, combine the olive oil, butter and garlic. Set over medium heat, and cook until butter has melted and the mixture starts to bubble. Season with salt and pepper. Remove from the heat.
  • Dip each slice of bread into the garlic mixture, turning to coat each side. Place Parmesan cheese on a plate. Press one side of each piece of bread into the cheese, and place cheese side up on a baking sheet.
  • Broil on the middle rack of the preheated oven for about 8 minutes, or until golden brown.

  • Saute about 1/4 of the mushrooms in butter over high heat until browned. Add shallots, reduce heat to keep from burning, and continue sauteing until soft. Add garlic and saute for 1 minute more.   • Polenta: Bring water to a boil, then slowly stir in cornmeal with a fork. Reduce heat as low as possible. Continue to cook for 5 to 10 minutes, stirring often. Turn heat off and add cheese and butter, and season, to taste, with salt and pepper. Top with ragout and serve.
