HERB AND BRIE OMELET

A fresh and light way to start your day, our omelet is ready in 15 minutes and features fresh herbs and creamy brie cheese.

Herb and Brie Omelet image

Steps:

  • Combine the eggs, basil, parsley, thyme, milk, salt and pepper in a mixing bowl. Whisk well to combine.
  • Heat small nonstick skillet over medium heat. (Skillet should be hot before pouring in egg mixture.) When skillet is hot, spray with nonstick cooking spray.
  • Pour egg mixture into skillet and allow it to cook, without stirring, until egg is almost set. Place cheese slices down center of egg; fold sides of the omelet over to cover cheese. Cover pan; continue to cook an additional 1 to 2 minutes or until cheese is melted.
  • Serve immediately.

Steps:

  • Melt 1 tablespoon butter in sauté pan.
  • Sauté apple slices until just turning soft.
  • Beat together eggs, cream or milk, and salt & pepper until blended but not frothy.
  • Melt remaining butter in omelet pan over high heat until foam begins to recede but before beginning to color.
  • Pour in egg mixture and prepare omelet, stirring lightly, but allowing it to set on the bottom.
  • Fill with sautéed apples and Brie.
  • Fold or roll and slide out of pan onto a heated plate.

1/2 apple, peeled, cored and thinly sliced
2 1/2 tablespoons butter, divided
2 eggs
2 teaspoons cream (or milk)
salt & pepper, to taste
2 tablespoons brie cheese, diced

  • 1. Saute apples in butter.
  • 2. Beat together eggs, cream, and salt and pepper until blended but not frothy.
  • 3. Melt butter in omelette pan over high heat until foam begins to recede but before beginning to color.
  • 4. Pour in egg mixture and prepare omelette, beating to lighten but still allowing it to set on the bottom.
  • 5. Fill with sauteed apples and diced brie cheese cubes.
  • 6. Fold or roll and slide out of pan onto a heated plate.

Apple-Walnut and Brie Omelette for Two image

Steps:

  • In a 10 in non stick skillet melt 1 t.
  • of the butter over medium heat.
  • Add the apples, walnuts, cinnamon, nutmeg and saute for 3 or 4 minutes.
  • Remove from skillet and keep warm.
  • Melt remaining butter while whisking the eggs with water.
  • Pour into skillet.
  • Tilt and rotate pan as the egg cooks.
  • Add the apple-walnut mixture to one side of the omlette, top with cheese and fold uncovered portion of omlette over top of the apple-walnut and cheese mixture.
  • Reduce heat to low and let set for 1-2 minutes.
  • Using a plastic spatula cut omlette in half and serve.

2 teaspoons butter (a bit more if not using a non stick skillet)
1 small granny smith apple, peeled, cored and sliced thin
1/4 cup chopped walnuts
1 dash nutmeg
1 dash cinnamon
1 teaspoon sugar
3 large eggs
2 teaspoons water
2 ounces brie cheese, cut into smallish cubes

Steps:

  • Heat oven to 200 degrees. Put apples in microwavable container. Add butter and nutmeg, stir to coat. Put in microwave for 3 minutes.
  • Melt 1 1/2 tsp butter in 8" or less non stick skillet. Pour half of egg mixture and cook through, cover if necessary. Put omelet on large enough oven safe plate. Layer cooked apples and all the brie, put in oven.
  • Cook remaining eggs in skillet with remaining butter. Put the omelet top of cheese and apples. Layer remaining apples on top.
  • Cut into fours and serve.
