OVEN BAKED SALMON
This lovely baked salmon never lasts too long in our household. My DH absolutely loves salmon and I have cooked it many ways over the years for him. This recipe is one of his favorites cooked in the oven with dried parsley, olive oil and lemon juice.

Steps:
- Run salmon under cold water and pat dry with paper towels, set aside.
- In a large oven-proof baking dish add 3 tablespoons of olive oil and place the salmon in the baking dish.
- Sprinkle the fish with the remaining 3 tablespoons of olive oil.
- Add in this order. The lemon juice, black pepper, kosher salt, dried parsley and place the lemon slices on top of the salmon.
- Cover with foil and bake in a preheated 350 degree oven for 45minutes or until cooked through and tender.
- Serve with long grained rice and steamed asparagus.

THE BEST BAKED SALMON

- Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the brown sugar, paprika, garlic powder, cayenne pepper, 1 teaspoon kosher salt and a generous amount of freshly ground black pepper in a small bowl. Mix the panko with the parsley, butter, 1/4 teaspoon kosher salt and a few grinds of black pepper in another small bowl.
- Place the salmon skin-side down on the prepared baking sheet and spread the surface with the Dijon. Press the brown sugar mixture all over the salmon then top with the breadcrumb mixture. Crimp all four sides of the foil to create a border around the salmon, this will help collect the juices so they don't spread and burn. Bake until the breadcrumbs are golden brown, and the salmon is firm and flakes easily when pressed, 15 to 18 minutes. Cut into four equal portions for serving.
EASY, NO-MESS BAKED SALMON
This is an easy, no-mess, no-cleanup recipe that tastes delicious! - In a medium glass bowl, prepare marinade by mixing garlic, light olive oil, basil, salt, pepper, lemon juice and parsley.

I used my daughter's recipe with some modifications. For those who don't really fancy the taste of fish, this recipe will cure you of that. It is light and no overpowering fishy taste. Serve with rice and a vegetable of your choice (we like it with steamed broccoli).

- Preheat oven to 375°F.
- Pour 1 Tbsp of olive oil evenly in the bottom of a 9x9-inch glass baking dish.
- Place the fillets in the bottom of the baking dish.
- Pour the remaining olive oil over the fillets.

- DO NOT PRE-HEAT YOUR OVEN. This is the trick.
- Lightly spray a cookie sheet with cooking spray. Or line pan with tin foil.
- Place Salmon fillet skin side down on pan.

OVEN BAKED SALMON PATTIES
A healthier version of the usual pan fried salmon patties, the recipe is for 2 people, but can be doubled for larger amounts. My DH is not a fan of any fish that is not deep fried, or of Salmon, I had to find something that he would like and would fit into his diet! - Mix Salmon, and first 8 ingredients together, use large egg, if seems dry, add mayo untill it seems moist enough form into 4 patties and refrigerate for at least 1 hour, to firm. Mix rest of dry ingredients in a bowl. When oven is hot, spread patties with mayonaise, one side at a time, place in panko mixture, to absorb as much as possible, repeat with other side, place on cookie sheet sprayed with cooking spray and bake in 425 degree oven for 10 min., turn patties over and cook for 10 minutes more, checking to see if they are done to your likeness. Oven fries or sweet potato fries can be done at the same time and go great with this!
