APPLE CINNAMON BREAD
This is a moist and delicious quick bread from a church cookbook called, ... not by bread alone. I have not made it with walnuts.

Steps:
- Mix together first 5 ingredients. Set aside.
- Mix 1 cup sugar with oil in large bowl. Stir in eggs and vanilla, then apples and nuts, if using. Stir in dry flour ingredients.
- Pour into greased loaf pan.
- Bake at 325 F for 50 to 60 minutes.
- After bread has baked for 20 minutes, remove from oven and sprinkle with 1 teaspoon sugar. Return to oven and finish baking.
- Do not undercook. Requires frequent toothpick testing at the end. Many variables seem to affect final doneness.
- Let cool in pan.
- Note: I made 2 mini loaves and baked them for 45 minutes.

FRESH APPLE-CINNAMON BREAD
This is a great apple-cinnamon bread made with fresh apples. Roma, Gala, and McIntosh are excellent apple varieties to use in this bread.

- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 8x4-inch loaf pans.
- Whisk sugar, oil, eggs, vanilla, cinnamon, salt, baking soda, and baking powder together in a large mixing bowl. Stir in flour just until evenly mixed. Add apples and walnuts; stir until well blended. Pour into the prepared loaf pans.
- Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 55 to 65 minutes.

- Heat oven to 350°F. Grease 12-cup fluted tube cake pan with shortening or cooking spray. Set aside icing tubs from cinnamon rolls. Separate each can of dough into 5 rolls; cut into quarters. Place apple in small bowl. In another small bowl, mix sugar and cinnamon. Add 1/4 cup sugar mixture to apple; toss to coat. Sprinkle half of apple pieces in pan. Roll half of dough pieces in sugar mixture; place on apples in pan. Sprinkle with remaining apple pieces. Roll remaining dough pieces in sugar mixture; place on apples. Pour melted butter over top. Bake 40 to 45 minutes or until golden brown across top. Cool 10 minutes; run knife around edge of pan to loosen. Place heatproof serving plate over pan and turn over; remove pan. Cool 10 minutes longer. Drizzle reserved icing over top of bread, allowing some to drizzle down sides. Pull apart to serve; serve warm.
AWESOME COUNTRY APPLE FRITTER BREAD

- Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick spray or line with foil and spray with nonstick spray, for easy removal.
- Mix brown sugar and 1 teaspoon cinnamon together in a bowl; set aside. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon in another bowl.
- Beat butter and remaining 2/3 cup granulated sugar together in another medium bowl with an electric mixer until smooth and creamy, about 5 minutes. Beat in eggs, 1 at a time, until blended in; add vanilla extract.
- Whisk flour and baking powder together in another bowl, then add to creamed butter mixture and beat until blended. Mix 1/2 cup milk into batter until smooth.
- Pour half the batter into the prepared loaf pan; add half the chopped apple mixture.
- Sprinkle half of the brown sugar/cinnamon mixture on top of apple layer.
- Pour the remaining batter over apple layer and top with remaining chopped apples, then the remaining brown sugar/cinnamon mixture.
- Lightly pat apples into batter; swirl brown sugar mixture through apples using a knife or spoon.
- Bake until a toothpick inserted in the center of the loaf comes out clean, approximately 1 hour and 10 minutes.
- Mix powdered sugar with remaining 1 to 3 tablespoons milk for a glaze, depending on preferred thickness.
- Let the loaf cool for about 15 minutes, then drizzle with glaze.
APPLE-CINNAMON BREAD PUDDING
With apples and cinnamon, this is a simple but delicious twist on bread pudding. Refrigerate leftovers. Can be served hot or cold.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a glass, deep-dish pie dish.
- Stir together sugar and cinnamon in a small bowl. Whisk milk and eggs together in a separate bowl.
- Butter one side of each slice of bread, and cut into cubes. Spread 1/2 of the bread cubes into the prepared pie dish, sprinkle with 1/2 of the cinnamon-sugar mixture, and 1/2 of the shredded apples. Since the rain, cold and gray of pre-winter has set in I have the desire to be baking again. This is one of my real favorites. It bakes up with that wonderful aroma of cinnamon and apples that just welcomes everyone be they family or guests.

This recipe comes from the Honolulu Advertiser & is about 15 years old. The apple cinnamon mixture is very rich & yummy. Sweet bread is readily available in Hawaii, but I bet the pudding would come out fine with regular white bread too.

- Preheat oven to 350 degrees.
- Heat 3 T butter in a nonstick frying pan& saute chopped apples& lemon juice on medium low heat.
- Add brown sugar& cinnamon& continue cooking til the juice drains from the apples& thickens.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x5-inch loaf pan. Sprinkle with 1 tablespoon flour.
- Prepare glaze: mix confectioners' sugar, milk, butter, and vanilla together in a small bowl. Place in the refrigerator to chill.
- Prepare bread: stir white sugar, butter, brown sugar, and egg together in a medium bowl.
- Sift flour, cinnamon, and baking soda together in another bowl. Slowly incorporate the wet ingredients with the dry ingredients. Stir in chopped apples. Pour batter evenly into the prepared loaf pan.

- Place oven rack in middle position.
- Heat oven to 350 degrees Fahrenheit.
- Lightly grease 9 or 10" deep-dish pie plate. Have ready a roasting pan larger than the pie plate.
- In a large bowl, toss apple slices with 2 tablespoons cinnamon-sugar.
- Place a large skillet over medium heat.
- Add 1 tablespoon butter; spread half of the apples to cover bottom.
- Cook 1 minute per side or until partially cooked.
- Remove to a large plate.
- Repeat with another 1 tablespoon butter and remaining apples.
- Add to plate.
- Meanwhile, put eggs, milk, vanilla and remaining cinnamon-sugar in the bowl.
- Add remaining 1 tablespoon melted butter; whisk until ingredients are well blended.
- Spread bread cubes in pie plate.
- Arrange apple slices in concentric circles on top.
- Pour egg mixture evenly over apples; sprinkle with reserved 1 teaspoon cinnamon-sugar.
- Set pie plate in roasting pan.
- Place pan on middle rack of oven; add very hot water to roasting pan to come half way up sides of pie plate.
- Bake for 40 to 45 minutes until a knife inserted near center comes out clean.

- In large bowl combine flour, sugars, baking soda, baking powder, salt, nutmeg and cinnamon.
