APPLE-PECAN-OAT QUICK BREAD WITH CREAM CHEESE GLAZE

Mix chopped toasted pecans into this apple bread, then glaze the whole loaf with a vanilla cream cheese icing.

Apple-Pecan-Oat Quick Bread with Cream Cheese Glaze image

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush one 9-by-5-by-3-inch loaf pan or three 6-by-3-by-2-inch mini loaf pans with melted butter and set aside.
  • Combine the flour, granulated sugar, baking powder, salt, baking soda, cinnamon and nutmeg in a medium bowl. Add the oats and pecans and toss together. Set aside.
  • Whisk together the melted butter, yogurt, vanilla extract, eggs and grated zest if using in a small bowl. Stir in the shredded apples. Fold this mixture into the flour mixture until just incorporated.
  • Transfer the batter to the prepared loaf pan(s). Tap the bottom on a hard surface a few times and smooth the top. Bake until a toothpick inserted in the center comes out clean, 55 to 60 minutes for the regular and 35 to 40 minutes for the minis. Transfer to a wire rack to cool for 30 minutes, then turn the bread out and let cool completely on the rack.
  • Whisk together the confectioners' sugar, cream cheese, milk and vanilla extract in a small bowl until smooth.
  • Pour the glaze over the bread and allow to set at room temperature, 15 to 20 minutes. Store in an airtight container for up to 1 week.

This is from a free cooking school booklet. This is made with Splenda but you could probably subsitute with no problems. I haven't made this, but it looks tasty. I catorgized this as a diabetic recipe. If it isn't, please let me know.

Steps:

  • Preheat oven to 350.
  • Spray a loaf pan with nonstick spray.
  • Cream butter and Splenda brown sugar blend together until smooth.
  • Beat in eggs, applesauce, orange extract and vanilla.
  • Set aside.
  • In a seperate bowl, combine flour, baking powder, baking soda, cinnamon and allspice.
  • Add the flour mixture to the butter mixture and blend until smooth.
  • Stir in raisins and nuts, if using.
  • Set aside.
  • Blend together the cream cheese, Splenda brown sugar blend, flour and orage extract.
  • Pour half of the bread batter into the prepared pan.
  • Spoon the cream cheese mixture on top.
  • Cover with the remaining bread batter.
  • Bake 60 minutes or until toothpick inserted in center comes out clean.

Steps:

  • In a large bowl cream together the butter and the sugar and beat in the honey and the eggs. Into the butter mixture sift together the flours, the baking powder, the baking soda, and the salt, stir the mixture until it is combined well, and stir in the apples, the cheese, and the walnuts. Spoon the batter into a buttered loaf pan, 9 by 5 by 3 inches, and bake it in the middle of a preheated 350°F. oven for 50 to 60 minutes, or until a tester comes out clean. Turn the bread out onto a rack, and let if cool completely, and serve it sliced with the cream cheese.

Steps:

  • In medium bowl, stir together cream cheese, confectioners' sugar, 1/2 t cinnamon and the ginger until combined well; set aside.
  • In large bowl, toss together apples, granulated sugar and 1 t cinnamon.
  • In a large nonstick skillet, melt 4 T butter over high heat.
  • Add apple mixture and cook, stirring occasionally, until just softened, about 8 minutes.
  • Remove from heat.
  • In a 13-by-9-inch shallow dish, whisk together milk, eggs, and remaining 1/2 t cinnamon; set aside.
  • Spread a heaping 1/4 cup cream-cheese mixture onto each of 4 bread slices.
  • Top each with 2 T nuts and 6-8 apple slices.
  • Cover with remaining 4 bread slices to make sandwiches.
  • Soak 2 sandwiches at a time in milk-egg mixture 5 minutes per side.
  • Add maple syrup to remaining apples in skillet and stir to combine.
  • Heat a griddle or large nonstick skillet over medium-high heat.
  • Add 1 T oil and 1 T butter to pan.
  • Add 2 sandwiches and cook, turning once, until golden brown, 6-8 minutes.
  • Repeat with remaining 1 T oil, 1 T butter and the sandwiches.
  • Cut sandwiches in half and serve immediately topped with apples in syrup.
