APPLE-OAT BRAN MUFFINS

Steps:
- In a small bowl, combine the first eight ingredients. In another bowl, whisk the egg white, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 16-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

BREAKFAST APPLE BRAN LOAF
Steps:
- Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
- Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
- While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
- Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
- Slice with a serrated knife and serve with butter on the side.
- Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.
BRAN MUFFINS WITH APPLESAUCE
This is one of my favorite bran muffin recipes, handed down from my mom. I made a few tweaks to make it even healthier. Add some raisins for a touch of sweetness.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
- Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
- Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.

APPLE OATSIE BRAN
For this recipe I use Light Silk and a rather coarse grater for the apples. I have a real sweet tooth so I add a teaspoon of splenda, but it's just a matter of personal preference.

- In a large bowl, combine the oat bran, flour, 1/4 cup sugar, baking powder and salt. In another bowl, beat the eggs, applesauce, oil and milk. Stir into dry ingredients just until moistened. Fold in raisins., Fill muffin cups coated with cooking spray three-fourths full. Combine the walnuts, cinnamon and remaining sugar; sprinkle over batter. APPLE RAISIN BRAN
A healthier side of a kind of muffin...if you don't mind a wheatier tasting muffin than you will enjoy this muffin. You could make this muffin sweeter by adding applesauce or sugar, but I wanted to make a healthy mufifn. Skim milk can be used instead of soy milk if you prefer.

- Combine all dry ingredients in a large mixing bowl. Beat egg whites in a medium bowl, add milk, molasses, and vegetable oil and stir well mixed. Pour mixture to the large mixing bowl and stir until just moist. Fold in apple and raisin.
- Pour batter into muffin tin either lined with paper or greased. Bake until tooth pick comes out clean, about 20 minutes. Remove from oven and cool completely on wire rack.

OAT BRAN APPLESAUCE MUFFINS
These got top ratings from my brothers, the muffin maniacs. And they're made with honey and whole wheat flour, so my mom loved them too! They are golden on the outside, moist on the inside, and look and smell just like "bakery" bran muffins. Enjoy!
