PORK AND APPLE SKEWERS
Meet the Cook: Necessity was the "mother" of this recipe! I'd already marinated the pork before realizing we were short on kabob vegetables. In place of them, I used apples I had on hand. This has since become one of my most requested dishes. I have prepared these tangy skewers for just the two of us - my husband and I, married only last July, are both in the military - and for friends. -Cheryl Plainte, Minot, North Dakota

Steps:
- In a large resealable plastic bag or shallow glass container, combine the first six ingredients; mix well. Reserve 1/2 cup for basting and refrigerate. Add pork to remaining marinade and turn to coat. Seal bag or cover container; refrigerate for at least 1 hour., Drain and discard marinade. Cut the apples into 1-1/2-in. cubes. Alternate pork and apples on metal or soaked wooden skewers. , Grill, uncovered, over medium heat, for 3 minutes on each side. Baste with the reserved marinade. Continue turning and basting for 8-10 minutes or until meat juices run clear and apples are tender.

GRILLED SHRIMP AND APPLE SKEWERS
Steps:
- Whisk together the honey, olive oil, basil, strawberry jam, red pepper flakes, garlic, red wine vinegar, lemon juice and white sugar in a small bowl. Place the apples and shrimp into a large resealable plastic bag. Pour the marinade over the shrimp and apples, seal the bag, and shake to coat; refrigerate for 30 minutes.
- Preheat an outdoor grill for medium-high heat.
- Thread the shrimp and apples alternately on 4 metal or soaked wooden skewers. Discard the remaining marinade.
- Cook the skewers on the preheated grill until the shrimp are opaque, about 5 minutes per side.

CHEDDAR APPLE SKEWERS

- Whisk the maple syrup and mustard in a small bowl.
- Cut the Cheddar into 8 cubes about 3/4-inch square. Core the apple but leave the peel, cut into 8 even pieces. Thread a piece of apple and a cheese cube onto each skewer.
- Serve the cheese skewers with the mustard sauce for dipping.

Steps:
- Thread apples on four skewers that are lightly spray with cooking spray.
- Combine sugar and cinnamon and sprinkle over apples.
- Lightly coat the grill rack with oil if needed.
- Grill, covered, over medium heat for 6-8 minutes or until golden.
- Turn them and cook another 8-10 minutes longer or until golden and tender.
- Serve warm.

- Wash apples and dice into 1/2 inch cubes. Place in a medium sized bowl and squeeze lemon juice over them and mix to prevent them from browning. You can also mix equal parts water and lemon juice in a small squirt bottle and spritz the apple skewers.
- Next, skewer the pieces of apple onto a toothpick. Approximately four pieces should fit on each toothpick. Place the apple skewers on a serving tray or large plate.
- In a small bowl, mix together the ingredients for the caramel sauce. Transfer the mixture into a squeeze bottle if desired.
- Using the squeeze bottle or a spoon, drizzle the caramel sauce evenly over the apple skewers and sprinkle with desired toppings. Serve immediately or store in a container in the fridge for up to a day.
