Recipe from "The Apple Barn Cookbook". I modified it for the bread machine (medium loaf) and got great reviews. It will remind you a bit of banana/zuccini bread Cheers!

Steps:

  • All ingredients should be at room temperature.
  • Place ingredients into your bread machine as the instructions that came with it direct. Mine are the following:.
  • Add liquid ingredients to the bread pan.
  • Add all dry ingredients, except yeast, to the pan.
  • Form a well in dry ingredients and carefully pour in the yeast.
  • Bake on "Sweet" Bread setting and choose your crust color, if applicable.
  • Press start!
  • (Note: The directions don't indicate to add the walnuts at the "beep", where you'd normally add fruit or nuts. Of course, you may hold them out and add them at the beep if you prefer.).

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In a large bowl, stir together oil, applesauce, eggs, sugar and vanilla extract. In a separate bowl, sift together flour cinnamon, baking soda and salt. Gradually stir flour mixture into wet ingredients, mixing just until combined. Fold in apples and walnuts. Pour batter into prepared pans.
  • Bake in preheated oven for 70 minutes, until a knife inserted in the center of a loaf comes out clean.

Steps:

  • Measure all ingredients into the bread machine pan, in the order given. Select the "sweet" or "basic" setting. Start machine and operate according to manufacturer's instructions.
  • If desired to shape by hand, operate machine using "dough only" setting. Remove dough from machine when done, cover, and let rest 20 minutes.
  • Shape bread into a braid by dividing into 3 parts and rolling out into thin tubes, then braid together. Place on greased baking sheet. Brush with an egg wash. (Or place dough into well greased bread pan.) Allow to rise in warm place until doubled, about 45-60 minutes. Bake in a preheated 350 degree oven for 30 minutes. Remove immediately from pan and cool on wire rack.

Steps:

  • In a large bowl, dissolve yeast in warm water. Add sugar, milk, butter, eggs, salt and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with cooking spray, turning once to coat the top. Cover and let rise in a warm place until doubled, about 1 hour., For filling, in a small bowl, combine apples and walnuts. Combine the sugar, flour and cinnamon; stir into apple mixture. Punch dough down. Roll into a 14x12-in. rectangle. Spread butter to within 1/2 in. of edges; sprinkle with apple mixture. Roll up jelly-roll style, starting with a long side. Cut in half. Pinch seams to seal and tuck ends under., Place loaves seam side down in two 9x5-in. loaf pans coated with cooking spray.
