FRESH APPLE COOKIES
This recipe has been in my recipe box for years so I'm not sure where it came from. They're a nice, light cookie that is similar to a snickerdoodle.

Steps:
- Preheat oven to 350 degrees.
- Cream together sugar, shortening & vanilla.
- Add in grated apple.
- Sift together dry ingredients.
- Add gradually to creamed mixture, combining thoroughly.
- *If dough appears slightly dry and doesn't come together, let it sit for a few minutes to allow the sugar to pull the juice from the apples.
- Roll in walnut-sized balls and roll in mixture of 2 Tbsp sugar, 1/2 tsp nutmeg and 1/4 tsp cinnamon.
- Bake 8-10 minutes on aluminum foil or parchment, until cookies are golden brown and appear crackled.
- Let cool on cookie sheet 4-5 minutes before transferring to cooling rack.
APPLE CRISP COOKIES
Let's face it, apple crisp is great but you can't easily pack it for lunch or snack on it as easy as you may want. This was my inspiration for coming up with this cookie. If you like apple crisp you will equally like this cookie. I prefer a background nutmeg flavor, feel free to add more (or leave it out) for your taste.

Steps:
- Preheat oven to 350°F.
- Cream butter with electric mixer; add sugar and cream together until fluffy.
- Add vanilla, egg, salt, cinnamon, nutmeg, baking soda and baking powder. Mix until well blended.
- Mix in 1/2 of the flour with electric mixer until well blended.
- Stir, by hand, remaining flour and oats. Depending on the humidity you may need a little less oats or a little more.
- Stir in the chopped apples. (I used 1 package of Del Monte dried apples that you can get in the supermarket in the same isle as the raisins, dried apricots).
- Drop by spoonfuls onto cookie sheet. I used a soup spoon but if you like smaller cookies, use a regular spoon.
- Bake for approximately 10 minutes. Rotate the pan if necessary after 7-8 minutes.

- Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Whisk the flour, oats, cinnamon, baking powder, baking soda, salt and allspice in a medium bowl. Combine the butter, brown sugar, granulated sugar and eggs in a separate bowl; whisk until smooth. Stir in the grated apple and vanilla, then stir in the flour mixture until just combined.
- Scoop heaping tablespoonfuls of the dough onto the prepared baking sheets, about 1 inch apart. Bake until just set around the edges, 10 to 12 minutes, switching the baking sheets halfway through. Let cool 5 minutes on the baking sheets, then transfer to a rack to cool completely.
- Make the glaze: Whisk the confectioners' sugar and milk in a bowl; drizzle on the cookies.

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- Grate the apple, and squeeze out the excess liquid. (This is a great snack for the kids; they love the fresh apple juice!) Mix the grated apple with the applesauce, coconut oil and maple syrup in a large bowl.
- Stir together the flour, oats, cinnamon, baking powder, nutmeg and salt in a medium bowl. Mix the dry ingredients into the wet ingredients until just combined.

- Preheat oven to 375 degrees F (190 degrees C). In a large bowl, mix all of the whole wheat flour together with the cinnamon, baking powder and salt.
- In a separate bowl, mash the butter, demerara sugar, and brown sugar together until thoroughly combined, then stir in the apple butter until smooth. Stir in eggs, vanilla extract, and apple juice until well mixed; pour the liquid mixture into the flour mixture about 1/3 cup at a time, stirring after each addition. Mix in the oats and chopped apple.
- With 2 teaspoons, form the dough into balls and place onto ungreased baking sheets about 2 inches apart.

- Preheat the oven to fan 170C/conventional 190C/gas 5. Using an electric whisk, beat together the butter and sugar until pale and creamy.

- Heat oven to 375°F. Spray cookie sheet with cooking spray. In large bowl, beat butter, granulated sugar and brown sugar with electric mixer on medium speed until creamy. Beat in vanilla and eggs, scraping sides occasionally, until blended.

APPLE SPICE COOKIES
Steps:
- Preheat the oven to 350 degrees. Line two baking sheets with parchment paper.
- Place the butter and brown sugar in the bowl of a stand mixer fitted with the paddle attachment and beat until combined, about 2 minutes. Add the maple syrup, vanilla and egg. Beat on medium speed until homogenous, about 1 minute more.
- Whisk together the flour, apple pie spice, baking soda and salt in a medium bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. - Bake the cookies until deeply golden brown, about 15 minutes, rotating the tray halfway through the baking time. Allow the cookies to cool on the baking sheets for 5 minutes before moving to a wire rack.

- Make the frosting: Add the cream cheese to a medium bowl and whisk until creamy. Add the honey and vanilla, and whisk until combined and smooth. Set aside.
- Slice the apples crosswise into ⅛-inch thick rounds starting 1 inch up from the bottoms. Each apple should yield 3-4 slices, or 12-16 total. Reserve the remaining apple trimmings for another use. Remove any seeds, then pat the apple slices with a paper towel to absorb any excess moisture.
- To make the reindeer apple cookies, scoop 1 tablespoon of peanut butter onto an apple slice and spread evenly over the surface.
