APPLES WITH CANDIED BACON à LA MODE

Steps:
- Put the bacon in a large skillet over medium heat and cook until some of the fat has been rendered and it begins to brown on the edges, 6 to 8 minutes. Pour off all but 1 tablespoon of the fat from the pan and sprinkle the bacon with 1 to 2 tablespoons of the sugar. Turn the heat to low and cook, turning the bacon pieces occasionally, until the sugar begins to melt and coat the bacon, about 5 minutes. Adjust the heat as necessary to prevent the sugar from burning. When the bacon is dark, remove it with a slotted spoon and let it cool on paper towels.
- Add the apples to the remaining bacon fat in the skillet, and cook until just beginning to soften on the edges, about 6 to 8 minutes. Add the remaining sugar and continue cooking until the sugar melts and the apples are very tender, 5 to 10 minutes more. Serve the apples over ice cream along with any pan juices and a sprinkle of the candied bacon.
APPLE-BACON GALETTE

- Make the crust: Cook the bacon in a large skillet over medium heat, turning occasionally, until golden but still soft, about 6 minutes; remove to paper towels. Reserve 1 tablespoon of the drippings in a small bowl; refrigerate until cold, about 15 minutes.
- Pulse 2 slices of the bacon in a food processor until finely ground. Add 1 1/2 cups flour and 2 tablespoons sugar and pulse to combine. Add the chilled bacon drippings and pulse to combine. Add the butter and pulse until the mixture looks like coarse meal with some pea-size pieces. Drizzle in 4 tablespoons cold water and pulse until the dough just comes together. Turn out onto a piece of plastic wrap; use the plastic to help form the dough into a disk. Wrap and chill until firm, at least 1 hour.
- Line a baking sheet with parchment paper. Roll out the dough into a 13-inch round between 2 sheets of lightly floured parchment. Peel off the top sheet of parchment, then invert the dough onto the prepared baking sheet. Peel off the sheet of parchment. Refrigerate the dough until ready to use.
- Preheat the oven to 375 degrees F. Make the filling: Peel the apples and slice 1/4 inch thick. Toss with the lemon juice, cinnamon, 3 tablespoons sugar and the remaining 1 tablespoon flour in a large bowl. Arrange the apples in the center of the dough, leaving a 2-inch border. Fold the edge of the dough over the filling, pleating as needed. Cut the remaining 4 slices bacon into bite-size pieces and sprinkle over the filling.
- Brush the crust with the egg and sprinkle the remaining 3 tablespoons sugar over the whole galette. Bake until the apples are tender and the crust is golden brown, about 50 minutes. (Tent loosely with foil if the filling gets too brown.) Remove from the oven and brush the filling with maple syrup while still hot. Transfer to a rack to cool slightly before serving.
BAKED APPLES AND BACON
Steps:
- Preheat the oven to 375 degrees F.
- Arrange the bacon on a sheet tray, sprinkle with some of the thyme and bake until crispy, about 12 to 15 minutes.
- Slice the apples horizontally to create 5 to 6 cross sections of the apple. On a separate sheet tray lined with a silpat or parchment paper lay the apples out in a single layer and drizzle with a little olive oil. Sprinkle a little sugar and thyme on each slice then bake in the oven until the apples begin to dehydrate and sugar has melted and caramelized, about 8 to 10 minutes
- To serve, lay the apple and bacon slices, alternating, in a long overlapping line on a serving platter. Or, break the bacon pieces in half and reassemble the apple slices back together, placing crispy bacon pieces in between each slice. Garnish with arugula and serve.

- Line bottom of rimmed baking sheet with foil; spray with cooking spray. Arrange bacon on pan. Mix sugar and chili powder; sprinkle on bacon slices. Bake 15 min. or until browned; remove and set aside. Increase oven temperature to 450ºF.

- In a large cast-iron or other heavy skillet, mix brown sugar, lemon juice and pepper. Cook and stir over medium heat until sugar is dissolved. Cut each apple into 16 wedges; add to the brown sugar mixture. Cook over medium heat 5-7 minutes or until apples are tender, stirring occasionally. Remove apples to a platter with a slotted spoon; keep warm., Add bacon to skillet; cook over medium heat, turning once, until heated through, about 3 minutes. Transfer to platter. - Preheat oven to 400^.Line a baking sheet with foil or parchment paper.. Candied Bacon Mixture #2: Put each bacon strip in the brown sugar and coat evenly ; pressing the sugar into the bacon; then sprinkle on the pepper and place on wire rack in the prepared baking pan in a single layer. Bake for about 12 minutes or until deep red and caramelized. Check often as cooking time may vary as to the thickness of the bacon. Use tongs to place on a cutting board to cool completely. Chop up when cooled.
- Apple Maple Filling: In a 12-inch square casserole dish, combine the apple pieces, maple liqueur, vanilla bean seeds, and nutmeg. Mix together to combine.
- Crumb Topping: Turn down oven to 375^. In a big bowl, combine the ingredients ,except the butter. Mix well- add the butter pieces and blend in with a pastry blender. Evenly distribute the crumbs over the apple mixture and bake for 40 minutes or until the topping is golden brown and the filling is bubbling.
- When serving place in bowls and top each bowl with 2 Tablespoons of the candied bacon and sprinkle on a bit of cinnamon schnapps,if desired; or a little dribble of heavy cream or whipped topping with a little caramel sauce. OH IT'S SO GOOD!
CARAMELIZED MAPLE APPLE PIE WITH CANDIED BACON CRUMBLE
The holidays deserve a pie worthy of its occasion. This towering pie is piled high with apples that bathe in a deep maple caramel with a slight tang from cider vinegar. It's topped with a buttery crumble studded with crispy candied bacon. A pie that definitely earns its place at the table.

- Preheat oven to 400 degrees F (200 degrees C). Place bacon on a baking sheet and sprinkle 1 tablespoon brown sugar over the top.
- Bake in the preheated oven until crisp, 10 to 20 minutes.
- Line a 9-inch springform pan with pie crust pastry; refrigerate.
- Combine apples and lemon juice in a bowl and toss to coat.
- Melt 1/4 cup butter in a large skillet over medium-low heat; add maple syrup and 1/3 cup brown sugar. Bring to a boil, lower heat, and simmer until mixture is reduced by half, about 5 minutes. Carefully add apples and stir well to coat. Cook until apples just start to soften and get a bit of color on them, about 5 minutes. Return the apples to the bowl leaving behind the sweet syrup.
- Stir vinegar into sweet syrup; simmer until syrup is reduced and consistency of maple syrup, about 5 minutes. Carefully pour syrup over the apples. Cool for 10 minutes.
- Combine flour, 1/4 cup brown sugar, 1/4 cup unsalted butter, baking powder, cinnamon, and salt in a food processor; pulse until crumbly. Break bacon into pieces, add to food processor, and pulse until combined with the crumble.
- Tip apples into the pie crust in the springform pan. Fold dough over part of the apple filling to form an edge. Crimp the edges between your fingers. Top the apple filling with the crumble. Brush crust with cream and top with white sugar.
- Bake pie in the preheated oven until the juices bubble and the crust is deeply golden, about 1 hour. If the crust starts to brown too quickly turn the oven down to 350 degrees F (175 degrees C).
