Steps:
- Throw the apples, apple juice and lemon juice into a pan and bring it to the boil over medium-high heat. Lower the heat and simmer until the apples are soft, about 15 minutes. Stir through the sugar and mix until melted. Add the cinnamon and stir through.
- Puree the mixture in a food processor, blender or food mill. If not using right away, leave to cool and then refrigerate.

- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets.
- In a medium bowl, cream together the brown sugar and shortening until smooth. Stir in the egg, and then the applesauce until well blended. Combine the flour, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the applesauce mixture. Mix in walnuts and raisins. Drop by teaspoonfuls onto the prepared cookie sheets.
- Bake for 10 to 12 minutes in the preheated oven, until the edges start to brown. Cool on cookie sheets for a few minutes before removing to wire racks to cool completely.

APPLESAUCE SPICE COOKIES

- Preheat oven to 375 degrees F.
- In a bowl, combine the dry ingredients and set aside.
- In the bowl of a standing mixer, fitted with a paddle attachment, cream the butter. Add the brown sugar and continue creaming. Then add the eggs and applesauce mixing well. Gradually add the dry ingredients and raisins to make dough.
- Drop by rounded tablespoons onto a greased cookie sheet (save those butter papers!) and bake until light golden brown, about 9 to13 minutes. The cookies do not brown very much. Sprinkle with powdered sugar.
- Peel and core apples and cut into quarters. Place them in an enamel sauce pan with the water and lemon juice then bring to a boil then turn the heat down slightly and simmer 30 minutes to break them down and get them to thicken. Take off the heat and stir in the sugar and cinnamon, if using.
ICED OATMEAL-APPLESAUCE COOKIES

- Make cookies: Preheat oven to 350. Put butter and sugars in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until combined. Add egg and applesauce, mix until well blended, 2 to 3 minutes. Mix in oats, flour, baking soda, baking powder, and salt. Mix in raisins.
- Using a 1 1/2-inch ice cream scoop, drop dough onto baking sheets lined with parchment paper, spacing 2 inches apart. Bake cookies until golden and just set, 13 to 15 minutes. Let cool on sheets 5 minutes. Transfer cookies to a wire rack set over parchment paper; let cool completely.
- Make icing: Whisk confectioners' sugar, syrup, and 3tablespoons water until smooth. Drizzle over cookies, let set.

- In the bowl of a stand mixer, combine the very soft butter, brown sugar and vanilla and stir until blended. For a light and cakey cookie, beat until light and creamy. For a cakey but slightly heavier texture (my preference) just beat until blended. Scrape the bowl well, then add the egg and stir until blended. Scrape bowl and stir in the applesauce.
- In a second bowl, stir together the flour, baking soda, salt and spices. Stir the flour mixture into the applesauce mixture, then stir in the oats, raisins and walnuts. The dough should be thick enough to scoop. If for some reason it's not, cover bowl and chill for 20 minutes.
- Scoop cookie dough with a large cookie scoop onto the baking sheet, spacing about 3 inches apart. Bake one sheet at a time for 350 degrees F for about 15 minutes. If you are making the cookies smaller, check at 10.
