Applesauce Zucchini Bread Recipes
ZUCCHINI BREAD
My zucchini bread is filled with great cinnamon flavor. It makes two loaves-have one now and give the second one to a neighbor or freeze for later. -Britt-Marie Knoblock, Lisle, Illinois

- Preheat oven to 350°. In a bowl, combine orange juice, oil, applesauce, eggs and vanilla. In a large bowl, combine flour, sugar, cinnamon, baking powder, salt and baking soda; mix well. Add orange juice mixture; stir until just combined. Fold in zucchini and pecans., Pour into two 8x4-in. loaf pans coated with cooking spray. Bake 60-65 minutes or until a toothpick inserted in center comes out clean.

Steps:
- Preheat oven to 350. Grease one 9 x 5 inch loaf pans. OR, one 12-cup muffin tin.
- Sift together flour, baking soda, baking powder, salt and cinnamon into a bowl.
- In a separate bowl stir together eggs, oil, applesauce, sugar, zucchini and vanilla. Make sure it is fully combined.
- Carefully pour flour mixture into egg mixture, stirring until completely combined.
- Pour entire mixture into loaf pans, making sure there is an even amount of batter in each. OR, if making muffins, fill muffin tins ¾ full.
- For Zucchini Bread bake for 40 minutes. OR, for muffins bake for 20 minutes.
- You will know when the bread or muffins are down when the centers are set and spring back when they are lightly touched.

- Add the flour, baking powder, baking soda, salt, and cinnamon. Stir just until no dry flour remains, trying not to over mix.
- Pour the batter into the loaf pan. Bake for 50 to 54 minutes. A toothpick inserted into the center of the bread should come out with moist crumbs on it.
