APPLESAUCE

My late father only knew how to cook two dishes and this was one. The type of apples you use will determine how mushy your apple sauce turns out. Cooking apples will turn into the texture of commercial applesauce while others will keep their shape even after the cooking. Either way it's delicious. The recipe can easily be doubled (or tripled...or quadrupled) to serve a crowd.

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the zest and juice of the oranges and lemon in a large bowl. Peel, quarter, and core the apples (reserving the peel of 2 of the red apples) and toss them in the juice. Pour the apples, reserved apple peel, and juice into a nonreactive Dutch oven or enameled iron pot. Add the brown sugar, butter, cinnamon, and allspice and cover the pot. Bake for 1 1/2 hours, or until all the apples are soft. Remove and discard the red apple peel. Mix with a whisk until smooth, and serve warm or at room temperature.

2 large navel oranges, zested and juiced
1 lemon, zested and juiced
3 pounds Granny Smith apples (about 6 to 8 apples)
3 pounds sweet red apples, such as Macoun, McIntosh, or Winesap (about 6 to 8 apples)
1/2 cup light brown sugar, packed
4 tablespoons unsalted butter
2 teaspoons ground cinnamon
1/2 teaspoon ground allspice

APPLESAUCE

I had some apples I wanted to use up, and I found this recipe for homemade applesauce in The Pillsbury Cookbook (1995). I used 1/2 cup turbinado sugar, but otherwise I followed the recipe exactly. This recipe actually calls for 1/2 cup to 3/4 cup of sugar, but I thought 1/2 cup was sweet enough (add more sugar if you prefer). I learned something new...if you want a chunky applesauce, cook the water and sugar with the apples because most fruits keep their shape when cooked in a sugar-water mixture. They become saucelike when cooked in water (and you add the sugar after it's cooked down). Personally, I thought this applesauce was sweet like a dessert, but it's also quite delicious (and your house smells great). Who knew making applesauce could be so simple and delicious compared to the tasteless stuff they sell at the store?

QUICK HOMEMADE APPLESAUCE - NO SUGAR ADDED

A quick, easy homemade applesauce recipe that I served with potato latkes this year. It has no added sugar, which makes it a better option for diabetics and low-carb people and others who avoid cane sugar. But if you prefer a sweeter sauce, add 1/2 cup of sugar. I recommend using 1/2 sweet apples (I like Braeburn) and 1/2 tart apples (Granny Smith, for example). Don't leave out the salt, it's a necessary ingredient for a good applesauce!

Steps:

  • Peel and core apples (I prefer to leave the skin on a few of them because I like the taste and texture). Cut apples into approximately 1 inch cubes.
  • Add all ingredients to pot, and turn heat on high. Bring to a boil, then cover and reduce heat to low. Simmer for 20 minutes or until the apples have softened significantly.
  • Stir frequently, making sure that the apples are not sticking to the bottom of the pot. Add more water if necessary. Remove lemon slices.
  • Mash with a potato masher or use a food mill for a smoother consistency. Serve warm or at room temperature.

OLD-FASHIONED APPLESAUCE

We had all kinds of apple trees in the yard when I was growing up, so I don't know for sure which ones Mother liked best for applesauce. (Today I use Cortlands.)
