APPLE-TOPPED CAKE
Complete with apples, walnuts, brown sugar and a dash of allspice, slices of this moist cake are perfect with coffee. Not many coffee cakes are baked in a springform pan but, in this case, the results are incredible. -David Heppner of Brandon, Florida

APPLE CAKE "TATIN"
Steps:
- Preheat the oven to 350 degrees F.
- Generously butter a 9-inch glass pie dish and arrange the apples in the dish, cut side down.
- Combine 1 cup of the granulated sugar and 1/3 cup water in a small saucepan and cook over high heat until it turns a warm amber color, about 360 degrees F on a candy thermometer. Swirl the pan but don't stir. Pour evenly over the apple slices.
- Meanwhile, cream the 6 tablespoons of butter and the remaining 3/4 cup of granulated sugar in the bowl of an electric mixer fitted with the paddle attachment, until light and fluffy. Lower the speed and beat in the eggs 1 at a time. Add the sour cream, zest, and vanilla and mix until combined. Sift together the flour, baking powder, and salt and, with the mixer on low speed, add it to the butter mixture. Mix only until combined.
- Pour the cake batter evenly over the apple slices and bake for 30 to 40 minutes, until a cake tester comes out clean. Cool for 15 minutes, then invert the cake onto a flat plate. If an apple slice sticks, ease it out and replace it in the design on top of the cake. Serve warm or at room temperature, dusted with confectioners' sugar.
TEDDIE'S APPLE CAKE
In a modern world of Cinnamon Hot Pockets and Pecan Pie Pringles, apple-picking is one of the few agricultural rituals we can all still get our hands into. This cake - a classic from 1973 - is a godsend to anyone who has overloaded at the pick-your-own orchard or overbought at the farmers' market. Like many simple cakes, this one uses neutral oil that lets the fruit flavor come through, rather than show-offy butter.

Steps:
- Heat 1 tbsp butter and 1 tbsp sugar in a large frying pan over medium heat until the sugar starts to melt. Add apples, then cook for about 5 mins, until nicely browned and the sauce is a rich caramel. Leave to cool.
- While the apples cool, make the topping. In a food processor or using the tips of your fingers, rub together flour, 85g sugar, cinnamon and cold butter until the mixture is crumbly and only pea-size pieces of butter remain. Stir in 2 tbsp of hazelnuts. Set aside in a cool place.
- Heat oven to 180C/160C fan/gas 4. To make the cake, place the remaining butter and sugar in a bowl or food mixer and beat until light and creamy. Add the eggs one at a time, followed by the vanilla extract. Add the flour, baking powder, cinnamon and milk in two goes, alternating between dry and wet ingredients. When the mixture is well combined, stir through the apples.
- Grease a 20cm cake tin with removable base and line the base with a circle of baking paper. Spoon in the cake mixture, smooth over the top with a spoon, then sprinkle over the streusel topping. Scatter with the remaining 1 tbsp demerara sugar and hazelnuts. Cook in the oven for 50 mins-1 hr or until a skewer inserted into the cake comes out clean. Leave to cool in the tin for 10 mins, then turn out onto a baking rack, remove paper and cool.

NO FAT OLD FASHIONED APPLE CAKE
Here is a recipe that I found on the www.recipe4living.com website. "Sure, 100 years ago it was ok to bake with lard, but in our modern times we've wizened up to the scary truth of fat. This cake has the same spicy taste of that 100-year old recipe... but without the fat."

FALL APPLE SKILLET CAKE
Here's a dessert that's perfect for a large fall dinner party, like ones we have at our friend's house upstate. Bring the two rustic skillets straight from the oven to the table to serve up. This cake is a cross between an apple cake and English pudding, so it is best eaten warm. Sprinkling melted butter, sugar, and cinnamon on the apples enables them to be slightly caramelized before they are enveloped by the batter. It's not like a pie or a tart, so don't hate me when the apple slices sink in. I've baked this cake in numerous ways and prefer it when the apples get all gooey and delicious from baking in the batter. Serve with creme Anglaise, whipped cream or vanilla bean ice cream.

Yield Two 9-inch round cakes
Number Of Ingredients 19
Steps:
- Preheat the oven to 350 degrees F. Grease two 9-inch cast iron skillets with butter or prepare springform pans, making sure they're lined.
- In a small bowl, toss the apple slices in lemon juice to stop them from browning, cover with plastic wrap, and set aside.
- Make the batter for the Milk and Honey Cake according to directions.
- For the Milk and Honey Cake:
- Place a large sifter or a sieve in a large bowl. Add the flour, baking powder, baking soda, and salt and sift.
- In a small bowl, whisk the eggs together. Set aside.
- In another small bowl, whisk together the buttermilk, honey, and vanilla. Set aside.
- Using an electric mixer with beaters or a paddle attachment, beat the butter for 30 to 45 seconds on medium speed, then gradually add the sugar. When all the sugar has been added, stop and scrape down the sides of the bowl with a spatula. Continue beating on medium speed for another 4 minutes or until light in color and fluffy.
- With the mixer still on medium speed, add the eggs 1 tablespoon at a time, over 3 minutes. If the batter curdles, add 1 to 2 tablespoons of the flour to bind it back together.
- With the mixer on low speed, add the dry and wet ingredients alternately two times, starting and ending with the dry. Mix until just combined and smooth. Don't overbeat. Scrape down the sides and bottom of the bowl with a spatula to make sure it's well combined.
- Divide the batter evenly between the skillets or pans and smooth the tops with a spatula. Working from the center out, gently lay the apple slices on top of the batter; leave behind any excess juice. Brush or drizzle the melted butter over the apple slices. Mix the sugar and cinnamon together and sprinkle evenly over the apple slices.
- Bake for approximately 30 minutes or until golden. A skewer may not come out completely clean due to the moisture of the apple, but it shouldn't be wet. If baked in a springform pan, let sit for 10 minutes then release and remove parchment paper.
- Serve with a dusting of confectioners' sugar and vanilla bean ice cream.
