Apricot-Chicken Rice Salad image

Steps:

  • In a 4 quart pot, bring the first 4 ingredients to a boil.
  • Stir in rice, cover tightly and cook over low heat for about 10 minutes until water is absorbed.
  • While the rice is cooking, combine all dressing ingredients in a small bowl.
  • Remove rice from heat and discard ginger.
  • Stir in apricots, raisins, chives, bell peppers, chicken and almonds.
  • Add dressing.
  • Cover and refrigerate.

3 1/2 cups cold water
1/2 teaspoon salt
1/2 teaspoon curry powder
1 1/2 inches fresh ginger, peeled and halved
1 (14 ounce) box instant brown rice
3/4 cup chopped dried apricot
3/4 cup golden raisin
1/4 cup chives
1 green bell pepper, chopped
1 red bell pepper, chopped
2 cups cooked chicken breasts, diced
1/4 cup toasted sliced almonds
2 tablespoons olive oil
2 tablespoons white wine vinegar
2 tablespoons dry sherry
1 tablespoon mayonnaise
2 teaspoons Dijon mustard
1/4 teaspoon black pepper
1 pinch cayenne

CHICKEN SALAD WITH APRICOTS, CELERY, AND BLUE CHEESE

This summer-season chicken salad is a dance between sweet, creamy, and acidic flavors and tender, crunchy, and juicy ingredients. Make it in early summer when apricots are peaking and choose a fairly nonassertive blue cheese that won't overwhelm the mix.

Chicken Salad with Apricots, Celery, and Blue Cheese image

Steps:

  • Toss chicken, celery stalks, and 1 tsp. salt in a large bowl. Let sit until ready to serve.
  • Whisk buttermilk, vinegar, honey, 1 tsp. pepper, and remaining 1/2 tsp. salt in a small bowl or measuring cup. Pour over celery mixture. Add apricots, blue cheese, mint, and celery leaves and toss just to coat.
  • Transfer salad to a platter and season with more pepper.

1 small rotisserie chicken, skin removed, meat shredded (about 4 cups)
1 bunch of celery, stalks separated, thinly sliced on a diagonal, leaves reserved
1 1/2 tsp. kosher salt, divided
1/2 cup buttermilk
3 Tbsp. white wine vinegar
1 tsp. honey
1 tsp. freshly ground black pepper, plus more
3 large or 4 small apricots, sliced
4 oz. mild blue cheese, sliced into shards

Steps:

  • Mix mayo, preserves, lemon juice and cayenne in a small bowl.
  • Toss chicken, grapes, almonds and tarragon in large bowl.
  • Add mayo mixture and toss until coated.
  • Season with salt to taste.

Baked Apricot Chicken and Rice image

Steps:

  • Preheat the oven to 325F degrees.
  • Spray 9 X 13 baking dish with non stick spray.
  • Place the chicken breasts in the bottom of the dish.
  • Combine preserves, soup mix, and salad dressing and spread them evenly over the chicken Bake in the preheated oven until the chicken is cooked through, about 1 hour.
  • Serve each breast on 1/2 cup of the rice and spoon a little sauce over the top.

  • RICE: In a small pot combine rice, coconut milk, and 1/4 teaspoon salt; bring to a boil over high heat. Reduce heat to low, cover, and simmer until milk is fully absorbed, about 10-15 minutes. Remove from heat and let the rice stand (still covered) for 10 minutes or until everything else is ready to eat. Fluff rice with a fork.
  • CUCUMBERS: Meanwhile, slice cucumbers into 1/4-inch thick slices. In a medium bowl, whisk together 2 teaspoons rice wine vinegar (reserve rest for later), 1 tablespoon olive oil (reserve rest for later), salt and pepper (I use 1/4 teaspoon each of salt and pepper). Add cucumbers and toss to coat; set aside. Toss again before serving.
  • CHICKEN: See Note 1; if using rotisserie chicken, simply shred or cut the chicken off the bones. If grilling, preheat a grill or grill pan to medium-high heat (about 400-450 degrees F.) Generously oil the grill (I drench a roll-up paper towel in vegetable oil and, holding it with tongs, rub it over the grill grates). Halve the chicken breast(s) horizontally and pound the pieces to even thickness (you don't need the chicken super flat, just even thickness so it will cook evenly). Drizzle each side generously with olive oil, salt, and pepper. Flip pieces over and repeat -- oil, salt, pepper, seasoning. Place the prepared chicken on the grill. Cook for 8-10 minutes, flipping once halfway through, or until chicken juices run clear and internal temperature is at 160 to 165 degrees F. (160 degrees will carry over heat to get to 165 degrees F). Tent chicken with foil and let stand for 5-10 minutes. Thinly slice or shred.
  • SAUCE: Heat remaining 2 teaspoons olive oil in a medium pan over medium heat. When oil is shimmering, add ginger, garlic, and red pepper flakes (add flakes to heat preference). Sauté, stirring, until fragrant, 1-2 minutes. Add apricot preserves, soy sauce, and remaining 3 tablespoons + 1 teaspoon rice vinegar. Bring to a boil over high heat, reduce heat to medium and cook until reduced by half, about 2-3 minutes. In a separate small bowl, whisk together the 1 tablespoon cornstarch with 1/2 cup water until smooth. Gradually add the cornstarch mixture to the pan while whisking constantly. Cook, continuing to whisk, until sauce has thickened, about 2 more minutes. Remove the pan from the heat and stir in salt and pepper to taste (I add in 1/2 teaspoon salt and 1/4 teaspoon pepper). Add sugar if desired. Toss shredded/thinly sliced chicken in sauce until well coated.
