ROSE WATER WHITE COFFEE

Lebanese white coffee isn't coffee at all. It is hot water, rose water, and a touch of crystallized sugar. This is a beautiful after-meal drink for anyone who doesn't like coffee or for who may have over indulged. Try this over ice for a refreshing drink on a hot day.

Rose Water White Coffee image

Steps:

  • Divide rose water between 2 tea cups. Add equal amounts of hot water to the 2 cups. Add 1/2 the sugar crystals and 1/2 the rose petal to each cup. Stir and serve.

The Persian Gulf was the location for given with this recipe. It should be appropriate to pretty much all of North Africa and the Middle East though. If your not familiar with rose water go very easy with it to start (no more than 2 Tbsp) and add more if you wish. Rose water is potent.

Arabic Coffee With Rose Water image

Steps:

  • Heat 6 cups of water in a large pan with the cardamom powder.
  • 2. Before the water boils, add the coffee and stir several times. Leave to boil for a minute or two.
  • 3. Remove from heat and leave for a few minutes for the coffee to settle.
  • 4. Pour the coffee in a kettle but leave the settled coffee at the bottom of the pan. Add in the cardamom pods, saffron, and rosewater.
  • 5. Place the kettle over low heat and when it starts to boil, remove and serve hot in small cups.

Steps:

  • Combine the smashed cardamom pods, the water, and pulverized coffee beans in an Arabic coffeepot or a small saucepan. Bring to a boil over medium-high heat, reduce to low, and simmer, covered, for 15 to 20 minutes, until the grounds have settled and the coffee is very strong. Pour the coffee carefully into small cups, allowing the grounds to stay in the bottom of the coffeepot. You can strain the coffee through a fine sieve, if desired. Serve.

1/2 cup coarsely pulverized dark-roast coffee beans

Steps:

  • Put 3 cups of water in a pot and bring to a boil.
  • Add the coffee and boil over low flame. Turn the heat off after 5 minutes and leave the coffee to clear.
  • Pour the coffee into a kettle, leaving the coffee to settle in the pot.
  • Add in the cardamom and saffron to the kettle of coffee and boil once before serving in small cups.

3 cups pure water
2 tablespoons arabic coffee
3 tablespoons ground cardamom, powder
1/4 teaspoon saffron

ARABIAN ROSE WATER PUDDING (MUHALBIYAH)

This is a famous Arabian dessert. It's more like cream caramel in texture, but it is much lighter. I wanted to share this with you guys, not only the recipe but sharing with you my Arabian roots. The rose water gives it a great flavor. Every Arabian house has its own recipe for this, not mentioning that, in Ramadan, when we Muslims fast, we must have this in our dessert table (it is essential). There are lots of ways to make it; most of us make it by it plain, while some add strawberries, some in layers with jellies, and some with cake as parfait. I make it just the way it is written. Hope you enjoy it. It's okay to replace the water and powdered milk with 3 1/2 cup of milk.

Steps:

  • Whisk water, rose water, milk powder, sugar, and cornstarch together in a saucepan until smooth. Place over medium heat, stirring with a wooden spoon, and cook until it begins to boil; cook at a boil for 2 minutes. Remove from heat immediately; stir a few times to help it cool.
  • Divide the mixture between 8 small serving glasses; refrigerate until set, about 2 hours.
