Steps:
- In saucepan, combine water, onion, garlic, oregano, chicken stock, and pepper. Bring to a boil; stir in rice, reduce heat, cover and simmer 10 minutes. Stir in cooked chaya. Cover and cook 5-10 minutes more until the rice is tender. Stir lightly with a fork and mix in lime juice. May be served hot or cold.

- Heat the lard in a large heavy skillet over medium-high heat. Add the rice, and stir until rice is toasted. Add the garlic and onion; cook and stir until the onion just begins to brown. Stir in the tomatoes, tomato sauce, chicken broth, chili powder and salt. Bring to a boil, then reduce heat to low, cover, and cook for 20 to 25 minutes, or until rice is tender. Let stand for 5 minutes, covered, before serving.

ARROZ CON LECHE
This recipe for arroz con leche came to us from Veronica Garcia of Houston. The original came from her maternal grandmother, but Ms. Garcia has since made a few adjustments: a little less sugar, a split vanilla bean and no raisins. But she still soaks and rinses the rice two times, making it a little lighter than a traditional rice pudding.

- Fill a medium pot halfway with water and bring to a boil. Remove from heat and add rice. Set aside 20 minutes.
- Meanwhile, combine whole milk, sugar, evaporated milk, vanilla bean and cinnamon sticks in a large heavy-bottomed pot (at least 4 quarts) and set over medium heat. Cook, stirring occasionally, 40 minutes. If mixture starts to boil, reduce heat so it is just barely simmering.
- While milk mixture cooks, drain the rice, rinse it and set it aside. Fill the medium pot halfway with fresh water and bring to a boil. Add drained rice to the boiling water, turn down heat, and simmer 6 minutes. Drain rice again.
- Add drained rice to the milk mixture and continue to cook at a gentle simmer, stirring occasionally, until the mixture has thickened considerably, another 20 to 25 minutes. Let cool slightly (mixture will thicken more as it cools), then remove cinnamon sticks and vanilla bean. Serve warm, room temperature or cold, sprinkled with ground cinnamon to taste.

- Rinse the rice under cold water and then put it in a saucepan over a medium heat, just barely covered with water (you could also cover it with milk for even creamier arroz con leche).
- Add milk about ½ cup at a time, stirring each time until all is absorbed. Continue adding up to the whole liter of milk, stirring continuously.

- Add chicken to a large bowl. Add in 1 tablespoon olive oil and your adobo seasoning: cumin, paprika, chili powder, cayenne pepper, onion powder, garlic powder, coriander, salt and pepper. Use clean hands to toss the chicken in the mixture. Cover and allow chicken to marinate for 30 minutes, or you can skip this completely and begin the cooking process!
- Next add remaining 1 tablespoon olive oil to a large deep 10 inch skillet and place over medium high heat. (If you do not have a skillet a large pot will also work very well!) Once oil is hot, add in chicken and season with a little more salt and pepper. Cook until browned 4-5 minutes, then flip and and cook an additional 4-5 minutes. Remove from pan and transfer to a plate.
- In the same skillet (it should be greased enough already for sauteing) you will make your sofrito by adding in garlic, jalapeno, diced green pepper, diced onion and cilantro.
- Saute for 2-3 minutes, then add in your spices (also known as homemade sazon spices): cumin, turmeric, coriander, garlic powder, oregano, salt and pepper and cook for 30 seconds. Then add in tomato sauce and water and stir well to combine.
