This is a great recipe that can be made in minutes. It's makes for an easy lunch served with pita chips and raw veggies.

Chickpea Hummus image

Steps:

  • Place everything in a food processor and blend together.
  • Add water until hummus is slightly less thick then desired, as it will thicken in the refrigerator.
  • Chill for about an hour.

1 (19 ounce) can chickpeas, drained and rinsed
1 garlic clove
2 tablespoons olive oil
2 tablespoons tahini
2 tablespoons lemon juice
1/2 teaspoon cumin
salt and pepper

Steps:

  • Blend everything together in food processor. Allow to sit in refrigerator for a few hours to blend flavours.
  • Note - I used water instead of broth, so I added about 1/2 tsp of McCormick no salt herb seasoning. Also, fresh parsley would work great.

1 (19 ounce) can chickpeas, drained and rinsed
1/4 cup Greek yogurt
1/4 cup water or 1/4 cup vegetable broth
1 tablespoon lemon juice
1 teaspoon dried parsley
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon paprika
1 pinch cayenne

Steps:

  • Tip the peas into a bowl and pour over boiling water to cover. Leave for 5 mins, then drain well and tip into a food processor with all the other ingredients and seasoning. Pulse to make a rough purée, then spoon into a small bowl. Cover with cling film, and chill until ready to serve.
