ARTPARK BROWNIES
This is an adopted recipe that I haven't yet tried. The original chef comments: "From Tender at the Bone by Ruth Reichl. The better the chocolate you use, the better the brownie you get....Please make sure that your oven temperature is accurate!"

Steps:
- Preheat oven to 400 degrees.
- Butter and flour a 9-inch square baking pan.
- Melt butter and chocolate in a double boiler over boiling water.
- Remove from heat and add vanilla.
- Beat eggs and salt in a mixer, add sugar at high speed and beat for 10 minutes until mixture looks white.
- Add chocolate/butter mixture to the eggs just until blended.
- Add flour and mix just until it is combined and you don't see any white streaks.
- Pour in prepared pan and put in oven.
- Immediately reduce heat to 350 degrees and bake for 40 minutes.
- Prick with a toothpick to test for "doneness" it should NOT be quite clean when you pull the tooth pick out.
- Be careful to not over bake - the brownies are fudge-like, not cake-like.
- Important: cool completely before cutting.
SAND ART BROWNIES
Steps:
- To color the sugar: Divide the sugar into 4 (1/2-cup) portions. Put 1/2 cup sugar into the jar and add 1 to 3 drops of food coloring. Put the lid on and shake the jar well until the sugar is completely colored. Empty the sugar into a small bowl and continue with the remaining sugar using different food colorings to make different colors.
- To make the Sand Art: Whisk together the flour and salt and set aside. Layer the dry ingredients into the jar, alternating colors (the sugar) and dark (cocoa powder) and light (flour), making your own design. Don't forget the chips! Screw on the lid and print out this recipe to enclose with your gift jar.
- To bake: Heat the oven to 325 degrees F. Grease a 13 by 9-inch pan with butter.
- Dump the contents of the jar into a large bowl. Mix together the melted butter, eggs, and vanilla. Stir the wet and dry ingredients together until well combined. Pour the batter into the prepared pan and bake for 30 to 35 minutes.
THE BEST BROWNIES
Everybody says their brownies are the best, but these really are the best. They feature the "holy trinity" of brownie perfection-a crispy, flaky top, chewy edges, and a fudgy center. Serve with a glass of ice cold milk.

- Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch square baking dish or pan, then line with parchment paper if desired to make getting the brownies out easier.
- Mix flour and salt together in a bowl; set aside.
- Place chopped chocolate and butter into a heatproof bowl and set over a saucepan with 1 inch of very gently simmering water. When the butter and almost all of the chocolate is melted, stir until smooth. Turn off the heat and set aside.
- Mix sugar and eggs in a mixing bowl with an electric hand mixer until very airy, thick, and creamy, about 5 minutes. Mix in vanilla extract, then slowly drizzle in the melted chocolate mixture, while mixing on high speed.
- Dump in the flour mixture and mix on low speed just until the flour disappears. Use a spatula to transfer the batter into the prepared baking dish and spread as evenly as possible.
- Bake in the center of the preheated oven until a toothpick inserted near the center comes out virtually clean, about 30 minutes. Let cool on a wire rack for 15 minutes. Use a spatula to lightly press down the higher parts of the brownie around the edge of the dish. Let cool to room temperature, 20 to 30 minutes, before removing and cutting into 9 pieces.

Steps:
- Melt together 1 stick butter and 2 squares unsweetened chocolate and take the saucepan off the heat.
- Stir in 1 cup sugar, add 2 eggs and 1/2 teaspoon vanilla, and beat the mixture well.
- Stir in 1/4 cup all-purpose flour and 1/4 teaspoon salt. (In the original recipe, 1 cup chopped walnuts is added here as well.).
- Bake the brownies in a buttered and floured 8-inch-square pan at 325°F for about 40 minutes.
- You can cut these brownies into squares, once they have cooled, and eat them out of the pan, but it is so much nicer to pile them on a fancy plate, from which people are going to eat them with their hands anyway. If you want to smarten up your act you can put a square of brownie on a plate with a little blob of créme fraîche and a scattering of shaved chocolate.

- Combine flour, salt and baking powder. In a 1-qt. glass container, layer flour mixture, cocoa, sugar, brown sugar, chocolate chips and M&M's, packing well between each layer. Cover and store in a cool, dry place up to 6 months. Yield: 1 batch (about 4 cups total). , To prepare brownies: Preheat oven to 350°. Beat eggs, oil and vanilla. Stir in brownie mix. Pour into a greased 8-in. square baking dish. Bake until center is set, 26-28 minutes (do not overbake). Cool on a wire rack.
