Steps:
- Heat 1 tablespoon sesame oil in a large pot over medium-high heat. Add the carrots, celery and ginger; stir in the scallions, reserving 2 tablespoons scallion greens. Season the vegetables with a pinch each of salt and pepper and cook, stirring occasionally, until the ginger softens, about 2 minutes.
- Season the chicken with salt and pepper and add to the pot along with the chicken broth and star anise. Cover and bring to a simmer over high heat, about 5 minutes. Reduce the heat to maintain a simmer, cover and cook until the chicken is just cooked through, 6 to 8 minutes. Remove the chicken with tongs and transfer to a cutting board; let cool slightly, then shred.
- Meanwhile, increase the heat under the pot to high. Stir in the spaghetti and 3 cups water; cover and cook, stirring occasionally, until al dente, about 8 minutes. Stir in the wontons and simmer until tender, 1 to 2 minutes. Stir in the spinach and shredded chicken and heat through; season with salt and pepper.
- Divide the soup among bowls, discarding the star anise pods. Top with the reserved scallion greens and drizzle with the remaining 1 tablespoon sesame oil.

SPICY CHICKEN NOODLES
No matter what recipe they're used in, rice noodles are a proven crowd-pleaser. I think this spicy chicken noodles dish is perfect for using up leftover chicken, assuming it wasn't horribly overcooked in the first place. If you did want to use raw chicken, go ahead and chop it up, and stir-fry it for a minute or two before adding your vegetables.

Steps:
- Cook chicken in a 6-quart pot of boiling unsalted water, covered, until just cooked through, about 3 minutes. Transfer to a large bowl with a slotted spoon.
- Add broccoli to boiling water and cook, uncovered, stirring occasionally, until just tender, 3 to 5 minutes. Transfer with slotted spoon to a colander to drain, then transfer to another bowl. Return water to a boil and cook noodles until tender (check often; cooking time on package may not be accurate). Reserve 1 cup cooking water, then drain noodles in colander and rinse under hot water.
- While noodles cook, tear chicken into chunks.
- Add oyster and hoisin sauces, sesame oil, chile garlic paste, half of scallions, and 1/3 cup cooking water to chicken and stir to combine.
- Divide noodles, broccoli, and chicken mixture among 4 bowls and sprinkle with sesame seeds and remaining scallions. Serve immediately, stirring just before eating. If noodles become dry, moisten with some of cooking water.
- Cooks' Note
- If you have to substitute a chile paste without garlic for the chile garlic paste, start with 1/2 teaspoon and add to taste.

ASIAN CHICKEN AND SNOW PEA NOODLE BOWL
A noodle bowl is basically a soup. This recipe can easily be changed to a beef noodle bowl, buy substituting beef for the chicken and beef broth for the chicken broth. The original recipe calls for tofu, but I don't eat this. Hard-headed, I guess. If you want it vegetarian use the tofu and vegetable broth. Additional bouillon powder can be added if you like the broth more flavorful.

HOW TO MAKE CHINESE CHICKEN NOODLES - EASY RECIPE - …
From food.onehowto.com
5/5 (4)Total Time 1 hr
- The first thing you have to know in order to make Chinese chicken noodles is that you need a wok or, failing that, a large skillet. What is essential, therefore, is to have a wok to get the flavor and texture of this oriental recipe. So the first step is to add a little oil to the wok and put it over a medium heat; while it's heating up, cut the onion, pepper and garlic into small pieces and sauté in the wok.
- Season the chicken breast with a little salt and ginger, and when you see the onion begin to become transparent, add the chicken and stir-fry for a few minutes. When it is half done, add the soy and oyster sauce so the meat will have the intense flavor of both sauces.
- When you see the chicken is almost done, add the broth to the wok and leave to boil. Add the noodles to the broth and cover the wok with a lid to simmer for about 5 or 10 minutes, the time required for the noodles how you like them; if you like them soft leave it a little longer until it is to your liking.
- When the noodles are to your liking, turn off the heat and leave covered for about 2 or 3 minutes to finish picking the perfect consistency for our recipe. Then serve at the table while still warm and enjoy a recipe chicken and noodles recipe worthy of the best restaurants at your own table. Bon Appetite!
