SIMPLE ASIAN MARINADE FOR CHICKEN

My boyfriend came up with an extremely quick and easy marinade to put on chicken fillets to BBQ one day with what we had left in the kitchen. Almost all my friends have asked for the recipe. It is foolproof. You can add anything else you may wish, such as chopped red chillies for colour or sesame seeds.

Simple Asian Marinade for Chicken image

Steps:

  • Put all ingredients together with chicken breasts and marinade for at least one hour. When cooked, throw over sliced green onions for decoration.

4 chicken breast fillets (skin optional)
1 cup soy sauce
1/2 cup fresh lemon juice
2 tablespoons grated fresh ginger
1/2 cup chopped fresh coriander
1 large scallions or 1 large green onion, sliced diagonally

Marinated Chinese Chicken Salad image

Steps:

  • Mix marinade ingredients in a small bowl.
  • Place chicken in slow cooker and pour marinade over chicken, coating each piece well.
  • Cover and cook on low 6 to 7 hours or on high for 3 to 4 hours. (Depending on how large your chicken breast are. Mine were small and were done in 5 1/2 hours on low).
  • Remove chicken from slow cooker and cool.
  • Reserve juices and place in a small sauce pan and simmer for 5 minutes then strain if desired. (I didn't strain it but you might want to if you have excess residual.).
  • Shred chicken into bite-sized pieces.
  • In a small bowl, combine the dressing ingredients with 1/2 cup of the juice from the slow cooker.
  • In a large serving bowl toss together the shredded chicken, lettuce, carrots, peanuts, cilantro, and noodles.
  • Just before serving, drizzle with the salad dressing.
  • Toss well and serve.

Steps:

  • In a small microwave-safe bowl, combine the soy sauce, oil, honey, ginger root, and garlic. Heat in microwave on medium for 1 minute, then stir. Heat again for 30 seconds, watching closely to prevent boiling.
  • Place chicken breasts in a shallow dish. Pour soy sauce mixture over, and set aside to marinate for 15 minutes.
  • Preheat a grill for medium-high heat. Drain marinade from chicken into a small saucepan. Bring to a boil, and simmer over medium heat for 5 minutes. Set aside for basting.
  • Lightly oil the grill grate. Cook chicken on the prepared grill 6 to 8 minutes per side, or until juices run clear. Baste frequently with remaining marinade. Chicken will turn a beautiful golden brown.
