ASIAN PRAWN NOODLES

Whip up this healthy noodle pot in no time. The spicy, sour Asian flavours match with leftover chicken, too, which you can add at the end instead of prawns

Steps:

  • Put the noodles in a bowl, pour over enough boiling water to cover, set aside to soak for 5 mins, then drain.
  • Meanwhile, pour 450ml water into a wok or wide pan and add the garlic, ginger, coriander stalks, chilli, tamari, spring onions and sugar snaps. Bring to the boil and simmer for 3 mins, then add the noodles and beansprouts to heat through.
  • Stir in the prawns, lime zest and juice, coriander leaves and the mint, if using. Return to the boil until steaming hot and serve in deep bowls, drizzled with a dash of sesame oil, if you like.

Steps:

  • Fry the prawns with salt and pepper until they've just turned pink. Take out and set aside.
  • In the same pan, fry the garlic and green chili for a few minutes before stirring in the peas and Thai green curry paste.
  • Add the prawns and noodles and mix together for another couple of minutes.
  • Serve with a little lime juice squeezed over.
  • Enjoy!

Hokkien Noodle With Seared Prawns image

Steps:

  • Place noodles in bowl and cover with boiling water.
  • Leave this to stand for 2 minutes, drain well.
  • Heat oil in a wok over high heat.
  • Add shallots, garlic and ginger and stir fry for 2 minutes, or till fragrant.
  • Add eggs, and stir it up till it breaks up.
  • Add Chinese broccoli or bok choy, oyster sauce, sliced pork and sweet chili sauce to wok and cook for 2 minutes.
  • The egg should be coating all the ingredients in wok.
  • Add noodles and cook for another 3 minutes.
  • Add bean sprouts.
  • Pour chicken stock in, and stir well.
  • Cover the wok, and let simmer for another 5 minutes.
  • Place noodles on 4 warmed serving plate or bowl.
  • Heat chilli oil in work over high heat.
  • Add prawns to wok and cook for 5 minutes, or till they turn pink.
  • To serve, place prawns on top of noodles, and serve with lime wedges.

Bring to boil and let it simmer for 1 ½ hours or until the ribs are tender but not falling apart. Once the soup base is done cooking, taste and add more salt, sugar and pepper if needed. Add the dark soya sauce for colour if needed.
  • Blanch the prawns and lean pork. Blanch the prawns you will be serving with the noodles briefly in the soup base until they turn pink and cook through. Remove and set aside. Using the boiling soup base, blanch the pork loin till cooked. Remove and cut the pork loin into thin slices.
  • Serve. Bring a small pot of water to a boil. Then portion out the noodles, bean sprouts and kangkong and blanch them. Transfer into serving bowls. Top with prawns, pork slices.
