'CHINESE BUFFET' GREEN BEANS
Every time my family and I go to a Chinese buffet we make a bee line for the green beans! This is a simple and tasty re-creation of that much loved side dish, goes well with any Asian meal. Make sure to slice the garlic, don't use a garlic press. Oyster sauce can be found in the Asian section of your grocery store, at an Asian grocery store, and online.

- Heat peanut oil in a wok or large skillet over medium-high heat. Stir in the garlic, and cook until the edges begin to brown, about 20 seconds. Add the green beans; cook and stir until the green beans begin to soften, about 5 minutes. Stir in the sugar, oyster sauce, and soy sauce. Continue cooking and stirring for several minutes until the beans have attained the desired degree of tenderness.

GREEN BEANS ALMONDINE

- Cook 1 pound trimmed, halved green beans in salted boiling water until tender, 3 minutes. Drain; rinse under cold water. Saute 1/4 cup sliced almonds in butter in a skillet over medium heat until golden, 2 minutes; add a pinch of nutmeg. Stir in the beans and 2 tablespoons water; season with salt and pepper. Cook, stirring, until warmed through, 2 minutes.
SUNNY'S EASY RED BEANS AND RICE

- Add the olive oil and sausage to a Dutch oven over medium heat. Cook, stirring, until the sausage releases some fat and begins to curl a bit on the edges, 3 to 5 minutes. Add the bell pepper, celery, onion, a pinch of salt and plenty of hefty grinds of black pepper (more than usual!). Cook, stirring, until the veggies are tender and the celery and onion are translucent and beginning to brown, 3 to 5 minutes. Stir in the beans and their liquid, garlic and ham hock.
- Add 1 cup water and bring to a boil. Lower to a simmer, then cover and cook until the beans are very tender, about 30 minutes. Serve over white rice with a shake of hot sauce.
BAKED BEANS WITH AN ASIAN FLAIR
I needed to put together something for dinner, so combined several things, working off one of my already published recipes, and came up with this. The flavors worked well together. However, I actually used Recipe #204223 for the terikyaki sauce, and it was great!

- Preheat oven to 425°F.
- In an ovenproof skillet (cast iron works great), brown the ground turkey with the onions, garlic and green pepper until meat is no longer pink and veggies are soft. Drain any grease.
- Add remaining ingredients, except for topping, and simmer gently, stirring occasionally for 10-15 minutes.
- Combine the topping ingredients and spread over the meat and bean mixture in the skillet.
- Bake for 20 minutes or until topping is golden brown.

ASIAN STYLE SALMON ON A BED OF FRENCH STRING BEANS
Beautifully seasoned salmon on a bed of veggies which I also served on a bed of Shirataki (Pronounced SHE-RAH-TAH-KEE)fettuccine noodles that LOW CARB FOOD!: containing 3g of carbohydrate per serving. LOW CALORIE: 20 cal / 4 oz. NO CHOLESTEROL, NO SUGAR, GLUTEN-FREE, DAIRY-FREE, CONTAINS 10% CALCIUM. The only added oil in this recipe is the teaspoon of sesame oil keeping it low in fat. Yes salmon is high in fat but it's a great fat so do eat and enjoy this healthy meal! This is a quick moving recipe so have all ingredients prepared as called for.

- Place all marinade ingredients in large zip lock bag and mix.
- Add fillets and toss to coat. Place in refrigerator for 1 hour.
- Mix cornstarch and water set aside.
- Heat grill pan and large wok or large pan to medium high heat.
- Remove salmon from marinade reserving the marinade for the beans.
- In heated non stick grill pan sear salmon 2 minutes.
- Meanwhile in a large heated wok add sesame oil, beans, peppers, onion and garlic stir fry for 2 minutes.
- Flip salmon and cook till desired.
- To the beans add reserved marinade, soy sauce and cornstarch/water mixture. Stir frying for 2 more minutes then add hoison sauce toss to coat.
- Remove beans to serving plate and top with salmon.
- Optional:.
- If serving on a bed of cooked rice or the noodles as I suggested toss them in the pan that the beans were cooked in, to coat the noodles from the sauce that remained in the pan adding a touch of water to the pan if needed.
- Plate then top with beans and salmon.
- Garnish with sesame seeds if desired.

OLD FASHIONED BAKED BEANS
Comfort food at its finest! This has been a staple in Nova Scotia homes for generations. Serve with brown bread and butter, and a good cup of tea! Prep time includes soaking the beans overnight.

Steps:
- Soak beans overnight, well covered with cold water.
- Pour off soaking water and pick over beans to remove any bad ones, or debris.
- Put beans in a pot.
- Cover with fresh cold water and add 1 tsp. baking soda.
- Bring to a boil and cook until skins of beans crack when you take one out on a spoon and blow on it.
- Cut onion in quarters and put in bottom of a bean crock or large casserole.
- Add the partially cooked beans.
- Put cut up salt pork on top.
- (Some people use the salt pork fat. I don't like fat, so I prefer to use the salt pork meat.) Combine brown sugar, molasses, mustard and salt with 1 1/2 cups boiling water.
- Pour over the beans.
- Add more boiling water, if needed, to come just to the top of the beans.
- Also, if needed during baking tme, add more boiling water.
- Bake, covered, at 300 degrees F for 6 hours, or until beans are tender.

- Wash the beans and snap the ends off. Blanche them in boiling water for 3-4 minutes. Drain immediately and put into an ice cold water bath to retain crispness.

- Place beans in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
- Heat vegetable oil in a large pot over medium heat. Cook and stir sausage in hot oil until oils slightly release from sausage and edges brown, 5 to 7 minutes. Stir onion, celery, and poblano pepper into sausage; cook and stir until vegetables soften and start to turn translucent, 5 to 10 minutes. Stir garlic into sausage mixture; cook and stir until fragrant, about 1 minute.
- Stir red beans, chicken broth, ham hock, bay leaves, black pepper, thyme, cayenne pepper, and hot sauce into the sausage mixture; bring to a boil, reduce heat to low, and simmer gently, stirring occasionally, for 1 1/2 hours. Add salt and continue simmering until beans are soft, meat is tender, and desired consistency is reached, 1 1/2 to 2 hours more. Season with salt.
