ASPARAGUS WITH HOLLANDAISE
Blanched asparagus is served with an easy blender-made Hollandaise sauce and a sprinkle of cayenne for a little heat.

Steps:
- Hold both ends of a stalk of asparagus and bend it until it snaps. Then use a knife to trim the remainder of the bunch to match. Discard the trimmed stems.
- Bring a pot of generously salted water to a boil. Add the asparagus and cook, uncovered, until tender, 4 to 6 minutes depending on the thickness. Drain in a colander.
- Meanwhile, put the egg yolk, lemon juice and cayenne in a blender. Pulse a couple times to combine.
- Put the butter in a small microwave proof bowl and heat in a microwave until just melted. With the blender running, gradually add the melted butter into the egg to make a smooth frothy sauce. If the sauce is really thick blend in a teaspoon of lukewarm water to loosen it up.
- Transfer the asparagus to a plate. Pour the sauce over the top of the asparagus, sprinkle with more cayenne if desired and serve right away.

ASPARAGUS AND CHEESE TART

- Fill a large bowl with ice water. Bring about 1 inch of water to a boil in a large skillet. Add the asparagus; cook until bright green and crisp-tender, 2 to 5 minutes, depending on the thickness of the asparagus. Drain and transfer to the ice water to stop the cooking; drain and pat dry. Preheat the oven to 400 degrees F.
- Roll out the puff pastry into a 10-by-16-inch rectangle on a floured surface. Transfer to a parchment-lined baking sheet and prick all over with a fork. Bake until light golden brown, about 12 minutes. Let cool slightly on the baking sheet.
- Meanwhile, mix the fontina, comte, shallot, egg yolks, milk, nutmeg and a pinch each of salt and pepper in a bowl until combined. Spread the cheese mixture evenly over the puff pastry, leaving a 1-inch border on all sides. Toss the asparagus with the olive oil, 1/4 teaspoon salt, and pepper to taste. Arrange the asparagus on the tart and bake until the cheese mixture is slightly puffy, 15 to 20 minutes. Sprinkle with the lemon zest. Serve warm or at room temperature.

- Preheat oven to 400°. In a large skillet, bring 1-1/2 in. of water to a boil. Add asparagus; cook, uncovered, 1-3 minutes or until crisp-tender. Remove asparagus and immediately drop into ice water. Drain and pat dry., In a small bowl, mix cream cheese, Parmesan cheese, mustard, lemon juice, salt and pepper until blended. Unfold puff pastry sheets; cut each sheet in half to make a total of four rectangles. Spread each rectangle with a fourth of the cream cheese mixture to within 1/4 in. of edges. Arrange asparagus over top, allowing tips to show at each end; roll up jelly-roll style. Using a serrated knife, cut each roll crosswise into four sections., Place on a parchment-lined baking sheet, seam side down. In a small bowl, whisk egg with water until blended; brush lightly over tops., Bake 25-30 minutes or until golden brown. Remove from pan to a wire rack; serve warm.

- Preheat oven to 450 degrees F.
- Trim the woody ends from the asparagus. Spread the spears in a single layer in a shallow roasting pan baking sheet, drizzle with olive oil, sprinkle with salt, and roll to coat thoroughly. Roast the asparagus until lightly browned and tender, about 10 minutes, giving the pan a good shake about halfway through.
- Meanwhile, put the egg yolk, lemon juice, and cayenne in a blender. Pulse a couple times to combine.

- In a large saucepan, bring water, butter, salt and pepper to a boil. Add flour and cheese; stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny.
- Spread dough over the bottom of a greased 10-in. quiche pan or pie plate, forming a shell by pushing dough from center toward the edges. Bake, uncovered, at 375 degrees F for 30 minutes or until puffed around the edges and golden brown.

- Preheat the oven to 200 C / Gas 6. Wash and trim the bottom ends from the asparagus. Boil the Asparagus for 3-4 minutes then drain them and let them cool down.
- Cut each slice of Parma ham in half.
- Wrap each asparagus spear with a half slice of ham.
- Brush a baking tray with olive oil and arrange the wrapped spears in a single layer. Season with salt and pepper.

- Stuffing:Mix gently in a bowl crab, cream cheese, onion, salt, pepper& hot sauce.
- Preparation of fish--------.
- Make a slit in each fillet about 3/4 way through.
- Divide the stuffing evenly between the 6 fillets.
- and stuff each one.
- Heat 2 tbsp oil in a hot skillet and brown the salmon fillets on both sides.
- Take out 2 sheets of phyllo pastry and cut them in half, lightly brush each piece with melted butter and layer them.
- Place a fillet with an asparagus spear on top of the (4layer) phyllo and fold the pastry over the salmon so it is completely covered.
- Repeat with remaining 5.
- You may now place the salmon in the fridge, covered, until ready to bake (can be prepared up to a day in advance).
- When ready to bake, preheat oven to 350F bake 20-25 minutes.
- Nice served with a white wine sauce or hollandaise.
SALMON ASPARAGUS EN CROUTE
This is a great Dinner Party Recipe. you can make it in the morning and pop it in the oven when guest arrive. this is from the Food networks Laura Calder. I used sour cream in place of creme fraiche and less of lemon zest amd dill. I also found that the asparagus was a lillte cruchy for us so I would blanche it for a couple of mintues

- Heat oven 450 deg
- Cut the tips off the asparagus and pouch in boilin salted water until tender 3 to 5 minutes. drain well, refresh in ice-cold water, then drain again. Puree the tips and stir in the cream,dill and lemon zest. Season with salt and pepper.
- Lay pastry with the long edge facing you. lay the salmon on the pastry, seson with salt and pepper. Lay the stems of asparagus on thp of the slmon length wise and then top with puree.
- brush the margins with the egg wash. lay the top pastry over the salmon and per to seal edges. Trim the edge leaving a 1 inch boarder. Press the edges toseal with a fork. Make 2 or 3 slits in the top to allow stream to escape. Brush with egg wash and bake until golden and puffed about 20 minutes.
- Remove from the oven and let cool five minutes before slicing.
