ASPARAGUS PASTA SALAD WITH ITALIAN DRESSING
This pasta salad is endlessly adaptable 365 days a year. Take your favorite pasta shape, add any vegetables in season then toss it all in a homemade Italian dressing. Yes, it's that simple!

- For the dressing: Whisk together all of the ingredients in a medium bowl until combined. Set aside.
- For the pasta salad: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, just until al dente. Add the asparagus and cook it with the pasta for 1 more minute. Drain the pasta and asparagus then rinse with cold water and drain thoroughly.
- Transfer the pasta and asparagus to a large bowl. Stir in the onions and tomatoes. Pour the dressing over the pasta, toss to combine, then cover and refrigerate for at least 3 hours and up to overnight. When ready to serve, stir in the Parmesan and enjoy cold or at room temperature.

Make the pasta salad: Remove the tough stems of the asparagus then cut each spear into 1-inch pieces. Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, 10 to 11 minutes, then add the asparagus to the pot and cook it with pasta for 1 more minute. Drain the pasta and asparagus then rinse it with cold water. It uses some of my favorite ingredients and I can not wait until late Spring when fresh, local asparagus is in season! A neighboring town, Hadley, Massachusetts is famous for its asparagus and I eat more than my fill every year!

- Bring 4 quarts of water to boil in a stockpot.
- Cook pasta according to package directions until al dente.
- Drain pasta and keep warm.
- Wash asparagus and remove and discard tough ends.
- Slice asparagus into one inch pieces.
- Cook asparagus in a large skillet in shallow water and steam for 1-2 minutes until crisp tender.
- Drain well and reserve.
- Chop chicken into one inch pieces.
- Cut grape tomatoes in half.
- Combine Italian dressing ingredients in a large bowl.
- Add cooked pasta and asparagus to the Italian dressing and mix together until everything is evenly coated.
- Add chicken, tomatoes, basil, olives, and cheese and stir to combine.
- Serve pasta salad warm or at room temperature.

TORTELLINI SALAD WITH ASPARAGUS AND BASIL DRESSING RECIPE

- Bring a large pot of generously salted water to a boil over high heat. Fill a large bowl halfway with ice and water. Line a baking sheet with paper towels or lay a clean kitchen towel on the counter. Trim one inch from the ends of the asparagus stalks. If some of the stalks o much thicker than a pencil, use a vegetable peeler to remove the woody exterior from he bottom half of each one. Cut the stalks and spears into1 inch lengths. Add the asparagus to the boiling water; cook until crisp-tender and a more vivid shade of green, about 2 minutes; do not drain the water. Use a slotted spoon to transfer the asparagus to the ice-water bath until cooled. Spread the asparagus on the baking sheet or kitchen towel to dry. Return the pot of water to a boil. Add the tortellini and cook, stirring often, until tender, according to the package directions. Drain the tortellini, rinse it with cold water and drain again, leaving it slightly wet. While the tortellini are cooking, toast the pine nuts in a small dry skillet over medium-low heat for several minutes, shaking the pan to avoid scorching, until fragrant and lightly browned. Cool completely. Whisk together the oil, lemon juice, shallot, garlic snd 1/2 tsp each of salt and pepper in a serving bowl. Add the cooked tortellini and tomatoes, tossing to incorporate, and lr sit for 15 minutes. Chop the basil leaves and add them to the bowl, along with the asparagus, Parm and toasted pine nuts. Taste, add more salt and pepper as needed and serve.

- This is a zesty salad depending on how you mix the seafood cocktail sauce.
- Making your own seafood sauce with chinese chili-garlic puree will produce a potent dressing that will overpower the asparagus unless test-tasting is done and needed menu adjustments are made with added ketchup and mayo.
- Smokers prefer the chinese chili-garlic-puree while the more sensitive palate of the non-smoker might find the original coctail sauce based recipe is fine-- Several"victims" here have suggested adding horseradish sauce to the coctail sauce YMMV.

- Cook pasta according to package directions, adding asparagus, cut into 2" pieces, during the last 2 minutes of cooking time. Drain and rinse under cool water.
