THREE SISTERS BOWL WITH HOMINY, BEANS AND SQUASH

There are quite a few legends within various Indigenous communities involving the three sisters: corn, bean and squash. The ancient and advanced farming techniques from the Cherokee and so many other tribes throughout the East Coast yielded countless strains of these ingredients, in many sizes, colors and flavors. These diverse seeds are not only a direct connection to the past, but a symbol of resistance to the destruction of our cultures. This recipe showcases the simplicity of these flavors and can stand alone as a vegan meal or can accompany bison pot roast, roast turkey or salmon with crushed blackberries.

Steps:

  • Place the hominy and tepary beans in separate medium bowls. Add enough water to each to cover the beans by 4 inches, and soak overnight at room temperature.
  • About 3 hours before serving, drain the hominy and the beans and place them in separate 3- to 4-quart pots. Add enough cool water to cover the hominy and tepary beans by 4 inches. Set each over high heat, bring to a boil, then lower the heat and simmer gently, stirring occasionally and skimming any foam that rises to the surface, until tender, about 1 1/2 to 2 hours. Reserve 2/3 cup of the cooking liquid from each type of beans (for 1 1/3 cups liquid). Drain the hominy and the beans and set aside.
  • Meanwhile, prepare the squash: Heat the oven to 425 degrees. On a parchment-lined rimmed baking sheet, toss the squash with 1 tablespoon oil and a pinch of coarse sea salt. Arrange the squash in an even layer and roast until golden and very tender, stirring halfway through, 35 to 45 minutes.
  • In a large skillet, heat the remaining 2 tablespoons oil over medium-high. Add the onion, chile powder, sage and a generous pinch of smoked salt and cook, stirring occasionally, until the onions are tender, 5 to 8 minutes. Add the reserved 1 1/3 cups cooking liquid and bring to a simmer.
  • Add the cooked hominy and beans to the skillet, then stir in the roasted squash and greens. Season to taste with coarse sea salt and serve.

1/2 cup dried hominy
1/2 cup dried brown tepary beans
1 small, unpeeled acorn squash (about 1 1/4 pounds), halved, seeds and membranes scraped away, then cut into 1-inch chunks
3 tablespoons sunflower oil
Coarse sea salt
1 small yellow onion, halved and thinly sliced
1 tablespoon New Mexico Hatch chile powder or any mild smoked red chile powder
2 teaspoons chopped fresh sage
Smoked sea salt
1/2 cup chopped dark greens, such as dandelion greens, kale or spinach

BISON POT ROAST WITH HOMINY

The American bison that once roamed the Great Plains were considered sacred animals by the Lakota and other people of the region, and served as a critical food source that was celebrated in ceremonies and honored in prayers. According to numbers published by the United States Fish and Wildlife Service, there were 30 million to 60 million bison in North America in the 1500s. By the end of the 1800s, settlers had decimated the population. In the late 1990s, the number of bison in North America had grown again, to nearly 300,000 animals in public herds and on ranches. It's exciting we now have access to this vitally important meat. When it's slowly braised, the lean, mild bison becomes fork tender; hominy brings substance and a subtly sweet, nutty corn flavor. Serve this dish alone or pair it with roasted turnips and winter squash. Soaking the hominy overnight before adding it to the pot helps it cook faster, so the dried corn kernels are ready in the same amount of time as the bison. Leftovers are terrific served over corn cakes or folded into tortillas. A small branch of foraged white cedar adds a woodsy note, but juniper berries achieve a similar effect.

Steps:

  • Add the hominy to a large bowl and cover with 3 inches of water. Let soak overnight at room temperature. Drain, discarding the soaking liquid.
  • Heat the oven to 250 degrees. Season the bison generously on all sides with 2 tablespoons salt. Heat the oil in a large Dutch oven or heavy pot over medium-high. Add the bison and sear it until browned on all sides, rotating the meat when it releases easily from the pot, about 15 minutes total. Transfer the meat to a plate, then add the drained hominy, stock, sage sprigs, cedar or juniper, and agave to the pot.
  • Bring to a simmer over high heat, scraping the bottom of the pot. Return the meat to the pot, cover, transfer to the oven and bake until the meat is very tender, 3 to 3 1/2 hours, turning over the bison about halfway through. Remove and discard the sage sprigs and cedar, if using. (If using juniper berries, you can discard them, but it's not necessary: They add surprising flavor and texture when eaten with the meat.) Stir in the greens until wilted. Season the liquid with more salt to taste.
  • Slice the meat into 1-inch-thick slabs and divide among shallow bowls. Spoon some of the sauce, hominy and greens over the slices, and garnish with whole or torn sage leaves.

1 cup dried hominy (see Note)
1 (3- to 4-pound) bison chuck roast
Coarse sea salt
3 tablespoons sunflower oil
3 to 4 cups bison or vegetable stock
2 fresh sage sprigs, plus more sage leaves reserved for garnish
1 (4-inch) branch wild white cedar, or 2 teaspoons dried juniper berries
1/4 cup light agave nectar
1 packed cup sliced dandelion greens (or other dark greens, such as spinach or kale)

  • Pinto Posole. As I said, posole is the first dish most people think of when hearing the word hominy. So to kick off this list is none other than one of my favorite vegan versions.
  • Hominy Au Gratin. Do you love gratin? Try something new and make it with hominy. It’s super cheesy and creamy like regular gratin; except with each bite, you get the earthiness of hominy and salty bacon bits to boot.
  • Beef and Hominy Casserole. This casserole is brimming with savory, cheesy, and tomatoey goodness. It’s also rich in protein and uses up a lot of ingredients that are hiding in your pantry.
  • Blue Cheese Hominy Casserole. If you think casseroles can’t be adventurous, you’ve never tried this. The bite of blue cheese, smokiness of paprika, and bounty of hominy are far from subdued.
  • Pinto Bean and Hominy Salad. You can also eat hominy fresh like this easy Texan-style salad. It’s full of garden-fresh veggies, pinto beans, and chewy hominy.
  • Mexican Black Bean and Hominy Salad. Here is another lively way to fix up a hominy and bean salad. The flavors are popping with freshness, thanks to the hint of lime and diced veggies.
  • Llapingachos de Mote (Hominy Corn Patties) These Ecuadorian-style llapingachos are seriously addictive. Classic llapingachos are a type of potato patty stuffed with gooey cheese, but this recipe uses hominy instead.
  • Canjica (Brazilian Hominy Pudding) Canjica is a truly special treat. It’s a type of dessert that features hominy with a rice pudding-like flavor. Condensed milk makes it rich, creamy, and sweet, which gets even better with the warming hint of cinnamon and nutmeg.
  • Cilantro Rice with Hominy. Need an easy Mexican side dish? Bust out the rice cooker because it’s cilantro rice and hominy time! Between the sweet hominy and leafy cilantro, this will be your new favorite side to make on Taco Tuesday.
  • Mote Pillo (Ecuadorian Hominy with Eggs) Mote Pillo is a gratifying breakfast that’ll give you a whole new perspective on scrambled eggs. Sautéing hominy with onions and simmering it with milk adds a deep layer of flavor, which only gets better when you scramble it with an egg.
