Steps:
- Preheat oven to 375 degrees. Place peaches, cornstarch, dark-brown sugar, and cinnamon in a large bowl. Toss until well combined. Pour mixture into an 8 1/2-by-11 1/2-inch baking dish.
- In a large bowl, combine flour, 1/4 cup granulated sugar, the baking powder, and salt. Using a fork, two knives, or a pastry blender, cut in the butter until the mixture resembles coarse meal.
- Whisk together egg and cream in a liquid-measuring cup. Slowly add this mixture to dry ingredients; mix with a fork until dough just comes together. Turn dough out onto a lightly floured board, and roughly shape into a 12-inch log. Using a bench scraper, cut log into twelve equal portions.
- Place rough balls of dough on top of peach mixture. Sprinkle with remaining 2 tablespoons granulated sugar. Bake until golden brown, about 45 minutes. Transfer pan to a rack, and let cool slightly. Serve with vanilla ice cream or whipped cream.

- Make the filling: Preheat oven to 350 degrees. In a large bowl, whisk together sugar and cornstarch. Add peaches and lemon juice; toss to combine. Divide filling evenly among four 8-ounce custard cups (or one 2-quart baking dish); transfer to a rimmed baking sheet.
- Make the topping and bake: In a large bowl, whisk together flour, 3 tablespoons sugar, baking powder, baking soda, and salt. Using a pastry blender or your fingers, blend in butter until mixture resembles coarse meal. Add buttermilk; stir just until a dough forms. Drop dough onto peaches, using about 1/3 cup dough for each custard cup. Sprinkle dough with remaining teaspoon sugar. Bake until fruit is bubbling and biscuit topping is golden brown, 35 to 45 minutes. Let cool 15 minutes; serve warm.
SUMMERTIME PEACH COBBLER
This recipe was given to me many years ago by Mrs. Orin Stevens of Fargo, ND. She told me she'd gotten it from a church cookbook. I've used fresh, frozen and canned peaches with equal success.

- Grease a 9 x 13-inch pan and line with peaches.
- Combine 1/2 cup sugar, flour, baking powder, salt, margarine, vanilla and milk.
- Stir till smooth.
- Pour over peaches.
- Combine 1 cup sugar and water.
- Pour over batter.
- Bake 1 hour at 350°F.
- Serve warm or room temperature.
PEACH COBBLER
I found this peach cobbler recipe on the internet from the Salt Lick Restaurant in Austin, TX. Everyone loves this recipe so much I have to make a double batch! Feel free to cut back on the sugar. Everyone has and the peach cobbler still comes out perfect. :D Personally, I always use two bags of frozen peaches instead of canned.

- Mix together flour, sugar, baking powder & salt.
- Stir in milk & egg.
- Pour evenly over melted butter.
- Combine peaches, sugar & spices and spread over batter-DO NOT STIR!

AUNT VERA'S FRESH PEACH COBBLER
This is one of my Aunt Vera's recipes that has been passed down and is an oft requested dish from my kids because Aunt Vera used to make it for them to have after school. It is simple, quick and delicious. You can serve this hot or at room temperature and it is REALLY good with a dollop of peach ice cream or some Cool Whip.

Steps:
- Preheat oven to 350 degrees.
- In a 9 x 13 inch baking pan, place the stick of butter and put it in the oven to melt.
- While the butter is melting, mix the Bisquick, milk, sugar and almond extract.
- Once butter has melted, pour the liquid mixture over the butter and place the chunks of peaches on top of the batter.
- Return this to the oven and bake for 45 minutes at 350 degrees.
