Steps:

  • 1. Preheat oven to 425 degrees F. 2. If necessary, cut whole wings into two pieces. In a bowl toss the wings with the oil, and salt. Place into a large plastic shopping bag, and add the flour. Shake to coat evenly. Remove wings from the bag, shaking off excess flour, and spread out evenly on oiled foil-lined baking pan(s). Do not crowd. Bake for about 20 minutes, turn the wings over, and cook another 20 minutes, or until the wings are cooked through and browned. 3. While the wings are baking, mix all the ingredients for the sauce in a pan, and over low heat bring to a simmer, stirring occasionally, and then turn off. 4. After the wings are cooked, transfer to a large mixing bowl. Pour the sauce over the hot wings and toss with a spoon or spatula to completely coat. Cooking Tip: These are always served with celery sticks and blue cheese dressing on the side.

AUTHENTIC ANCHOR BAR BUFFALO CHICKEN WINGS

This is the original spicy Buffalo chicken wings recipe from the Anchor Bar in Buffalo, NY. You can adjust the heat by adding more or less cayenne and Tabasco. There are many Buffalo chicken wing recipes out there, but if you want to taste the "real" thing give this a try. The chicken wings are deep-fried in the original recipe, but the hot oven works fine for the home version. Makes 6 Servings of Buffalo Chicken Wings (6 per person)

Boneless Buffalo Chicken

Steps:

  • Prep the chicken:
  • Stir buttermilk, hot sauce, and 1 Tbsp. salt in a wide, shallow bowl. Add chicken and toss to coat.
  • Mix flour, garlic powder, paprika, cayenne, black pepper, and remaining 1 Tbsp. salt in a large bowl.
  • Working in batches, transfer chicken to bowl with flour mixture. Toss to coat, then transfer to a rimmed baking sheet or large platter. Working in batches again, dip in buttermilk mixture, allow excess to drip off, then dip again in flour mixture. Transfer back to baking sheet and chill at least 15 minutes and up to 2 hours.
  • For the hot sauce:
  • Meanwhile, cook butter, hot sauce, and maple syrup in a small saucepan over medium heat, stirring, until butter is melted and mixture is smooth.
  • For the blue cheese dip:
  • Whisk sour cream, buttermilk, blue cheese, pepper, salt, and 1 Tbsp. plus 2 tsp. chives in a small bowl. Top with remaining 1 tsp. chives.
  • Fry the chicken:
  • Preheat oven to 250°F. Set a wire rack over another rimmed baking sheet.
  • Pour oil into a large heavy pot fitted with thermometer to a depth of 2". Heat over medium-high until thermometer registers 350°F. Working in batches, fry chicken, turning occasionally, until crispy and golden brown and an instant-read thermometer registers 165°F, 4-6 minutes per batch. Transfer chicken to prepared wire rack, season with salt, and keep warm in oven.
  • Right before serving, transfer fried chicken to a large bowl. Pour hot sauce mixture over and gently turn with tongs until coated. Serve with blue cheese dip and celery sticks alongside.

For the boneless wings:
2 cups buttermilk
2 tablespoons hot sauce (preferably Frank's)
2 tablespoons kosher salt, divided, plus more
2 pounds boneless, skinless chicken breasts, cut crosswise into 1" strips
3 cups all-purpose flour

For the hot sauce:
5 tablespoons unsalted butter
1/2 cup hot sauce (preferably Frank's)

For the blue cheese dip:
1/2 cup sour cream
1/4 cup buttermilk
1/4 cup crumbled blue cheese
1/2 teaspoon freshly ground black pepper

Steps:

  • The Sauce: This makes enough for about 30 "wingettes." Mix all the ingredients in a small sauce pan over low heat until the margarine is completely melted. Stir occasionally.
  • The Wings: Fry the wings in a deep fryer set at 375 degrees F using vegetable or peanut oil. Fry 15 wings at a time for 12 to 15 minutes. Drain the wings for a few minutes then put them in a bowl. After all the wings have been fried, pour the sauce over them, cover the bowl, and shake to completely coat the wings.
  • They can be eaten now, or you can put them on a baking sheet and bake them for a few minutes to get an extra-crispy coating.

ORIGINAL BUFFALO CHICKEN WINGS

As published in the "Great Lake Effects" cookbook by the Junior League of Buffalo, NY. The origin of this recipe began in 1964 at Buffalo's Anchor Bar. These are the real deal. I should know, I grew up there!

Steps:

  • Wings:.
  • Disjoint the chicken wings and discard the tips. Rinse and pat dry. The wings must be completely dry to fry properly since there is no batter or breading.
  • Preheat the oil in a deep fryer or a large deep pan to 365°F.
  • Add the chicken wings a few at a time to the hot oil. Do not allow the oil to cool as the chicken is added. Deep-fry for 6-10 minutes or until crisp and golden brown. Drain well by shaking in the fryer basket or a strainer.
  • Blend the butter with 1/2 bottle of hot sauce for medium-hot wings. Add additional hot sauce for hotter wings or additional butter for milder wings.
  • Combine the wings and the hot sauce in a large container. Let stand, covered.
  • Serve the chicken wings w/ Bleu Cheese Dressing and celery sticks.
  • Blue Cheese Dressing:.
  • Combine the mayonnaise, vinegar, dry mustard, pepper, and salt in a large bowl and beat until well blended. Mix in the blue cheese.
  • Add enough cold water gradually to make the dressing of the desired consistency, whisking constantly.
  • Store in an airtight container in the refrigerator.
  • Makes 3 1/2 cups.

  • Toss the wings with flour, shaking off any excess. Place wings on prepared baking sheet in a single layer, leaving a little room between pieces so that it heats evenly. You can skip this step, but the flour helps the sauce cling to the wings.
  • While the wings cook, melt butter in saucepan, add cider vinegar, cayenne pepper, garlic powder and hot sauce. If you are short on some ingredients you can skip the cider vinegar, pepper or garlic powder, but they add a nice nuance if you have them handy.
  • Toss cooked chicken wings with the hot sauce. Add a few wings at a time to sauce so that they cover evenly.
