ONE-POT SAUSAGE CASSEROLE WITH GARLIC BREADCRUMBS
Take 'sausages and beans' from its modest midweek meal status and elevate it to an elegant one-pot casserole that's special enough for entertaining

- Heat the oven to 220C/200C fan/gas 7. Heat 1 tbsp of the oil in a shallow ovenproof casserole over a medium heat and gently fry the sausages for 5-8 mins, or until brown on all sides. Transfer to a plate using tongs. Tip the onions into the pan and fry for 5-8 mins until beginning to turn golden. Drizzle in a little more oil if the onions start to stick. Sprinkle in the sugar and cook for a minute before stirring in the vinegar, tomato purée and paprika to form a paste. Tip in the tomatoes, then pour the wine into the tomato can, swish it round, and add to the pan. Stir in the bay leaves and beans, then arrange the sausages on top so they're half-submerged in the sauce but still a little exposed.
- Bring the mixture to a simmer, then bake in the oven for 20 mins. Meanwhile, make the topping. Mix the breadcrumbs with the garlic and parsley, then season and stir in 1 tbsp oil. Scatter the topping over the casserole, then drizzle with the remaining 1 tbsp oil and bake for 10 mins more until the breadcrumbs are golden and crisp. Leave to stand for a few minutes, then take to the table and serve from the dish.

AUTUMN SAUSAGE CASSEROLE (IN THE CROCK POT )
Easy peasy recipe adapted from A Year of Slow Cooking. After looking through the reviews at her blog, I see that cooks who used a 6.5 quart crock pot had problems with this cooking too much. My crock pot is a 4 quart size and I have not experienced that problem. I do think the stirring is a good suggestion and have changed the directions accordingly. You could use any sausage you want but the sausage does need to be partially cooked or smoked. Try chicken with artichokes, chicken with apple, kielbaska, Italian, andouille, or whatever sausage your family enjoys. This uses LEFTOVER rice so plan for that. I love leftovers. :) This could be gluten free if you are very careful with your choice of sausage.

- If you are going to use uncooked sausage, brown on the stove top, and drain before adding to the crockpot.
- Otherwise, line your 4 quart sized crock pot with a slow cooker liner, dump ingredients into the crock, and stir well.
- Cover and cook on low for 3 1/2 to 4 hours, or until the orange vegetable is tender.
- STIR once during the cooking time. I have not made this on high but am guessing an hour with more frequent stirring.

- The Directions.
- The amount of ingredients fit nicely in a 4 quart crockpot. I'd say this comfortably feeds a family of 4-5 with a bit of leftovers. If you have a large family or teenagers, add more rice and sausage. It's a pretty easy recipe to adapt to your needs.
- If you are going to use uncooked pork sausage, I'd recommend browning on the stove top, and draining before adding to the crockpot.
- Otherwise, dump all the ingredients into the crock, and stir well.
- Cover and cook on low for 5-7 hours, or on high for 3-4. You're really only heating through, and allowing the vegetables to soften.
- This will not stick together like a gloppy casserole; it has the consistency of fried rice. Use bowls to serve rather than plates.
AUTUMN SAUSAGE CASSEROLE
I usually shy away from making up recipes myself, but I threw caution to the wind when I had some sausages on hand and couldn't find a recipe I liked for them. The result was surprisingly good so I decided to post my experiment :)

- Preheat oven to 375°F.
- Cut sausages into 3/4" pieces. Fry in oil over medium heat until cooked completely through. Remove to a lightly greased casserole dish.
- Meanwhile, chop sweet potatoes into 3/4" cubes, place in a microwaveable bowl with 2 Tbsp water, cover and cook on high 3-5 minutes or until tender. Drain (if necessary) and add to sausage.
- Slice onion into thin rings. Core and slice apple into thin slices, peeling if desired.
- Drain all but 1 Tbsp grease from sausage pan. Add onions and cook, stirring often until soft and golden. Add apples and cook an additional 2 minutes.
- Add garlic and rosemary. Cook, stirring, for 1 minute.
- Add wine and broth. Cook for 2 minutes, stirring a couple of times.
- Add onion mixture to sausage and sweet potatoes and stir gently to combine.
- Place in oven for 15-20 minutes.

- Heat the oil in a saucepan over medium heat. Cook sausage, stirring until it breaks into small pieces and is no longer pink, about 10 minutes. Remove sausage with a slotted spoon, and set aside.
- Pour off all but 2 tablespoons of the rendered fat, and discard. Raise heat to medium high, and add the onions; cook, stirring, until golden, about 8 minutes.
