I had a giant jar of Za'atar I was sick of saving for hummus and savory yogurt - that's when I came up with this avocado toast that rivals many of the best avocado toasts I've had.

Avocado Toast With Za'atar image

Steps:

  • Toast your bread.
  • Mash your half avocado and spread on bread, it will be a thick layer.
  • Drizzle your avocado toast with olive oil, about 2 teaspooons worth.
  • Sprinkle a pinch or three on za'atar on the avocado, how much you use is up to your taste-start small you can always add more.
  • Sprinkle toast with a pinch of fleur de sel, crushing it between your fingers as your sprinkle it over your toast.
  • Eat!

1 thick slice bread, preferably something with an airy crumb and good crust
1 half of a ripe avocado
high quality olive oil
maldon salt or other fleur de sel
za'atar spice mix

Steak Salad With Za'atar Chimichurri image

Steps:

  • Make the chimichurri: Combine the cilantro, mint, parsley, olive oil, vinegar, za'atar, jalapeño, lime juice, shallot and a pinch of salt in a blender. Puree, scraping down the sides as needed, until smooth with just a few small chunks remaining. Set aside or refrigerate for up to 3 days in advance.
  • Prepare the steaks: Sprinkle the steaks all over with 1 teaspoon salt and a generous amount of pepper. Melt the butter in a large skillet over medium-high heat. Add the steaks and cook, flipping halfway through, until a nice golden crust has formed on both sides and the temperature registers 125˚ F (for medium rare) on an instant-read thermometer, 7 to 8 minutes total. Transfer to a cutting board and let rest for 3 to 4 minutes.
  • Return the skillet to the heat and turn to medium. Add more butter to the skillet if it is dry and add the za'atar. Toast until fragrant, about 1 minute. Stir in the shallot and cook, stirring occasionally, until softened, 5 to 6 minutes. Add the peas and sauté until tender but still crisp, 1 to 2 minutes. Transfer to a plate, leaving any remaining butter in the skillet.
  • Mix the arugula and spinach together and place on a platter. Sprinkle with the avocado, radishes, peas and shallots. Slice each steak into thick pieces and place atop the salad. Drizzle with some of the chimichurri and serve immediately with the remaining chimichurri on the side.

Avocado Labne Toast image

Steps:

  • For the roasted cauliflower: Put a baking sheet in the oven and preheat to 450 degrees F.
  • Meanwhile, toss together the cauliflower florets, olive oil and za'atar in a medium bowl. When the oven is at temperature, pour the cauliflower onto the hot baking sheet, making sure to scrape out all the oil and za'atar. Bake for 10 to 12 minutes, until the cauliflower is crispy and tender. Let cool slightly.
  • For the toast: Preheat a grill or grill pan over medium heat. Lay the sliced bread out on a clean work surface, brush on both sides with oil and season with salt. When the grill is hot, add the bread and grill for 1 to 2 minutes per side, until the bread is charred and toasted. Remove to a baking sheet.
  • For the avocado: Place the avocado, 3 tablespoons of the Fresno chile, and the garlic in a large bowl. Mash together with the back of a fork until evenly incorporated but still chunky. Stir in the lime juice and season with salt. Let sit for 5 minutes, then taste and adjust the salt and lime juice as needed. You can also stir in the remaining 1 teaspoon Fresno chile for more heat!
  • For the labne: Mix together the labne and honey. Set aside.
  • To assemble: Divide the avocado mixture evenly over the toasts, spreading it to the edges. Top with the labne, leaving a 1-inch border. Add a few pieces of roasted cauliflower to each toast. Serve immediately.

Steps:

  • Heat the vegetable oil in a large, wide skillet to 350 degrees F.
  • Fry the tortillas in the oil until golden brown and crispy, 3 to 5 minutes per side. Remove the tortillas with tongs, shake off any excess oil and transfer to a paper towel-lined baking sheet. Season with kosher salt on both sides.
  • Add the avocados to a food processor with the sour cream, lime zest and juice and half of the cilantro (stems and leaves). Grate in the garlic and puree until smooth. Season with kosher salt and black pepper. Add 1 tablespoon of the olive oil and pulse several times to combine.
  • Spread the avocado mixture on the tortillas (about 1/4 cup per tortilla) and top with the red onions, cotija, cherry tomatoes and remaining cilantro leaves. Drizzle with the remaining 1 tablespoon olive oil. Season with flaky sea salt and black pepper.
