CHOCOLATE ALMOND BARK

Steps:
- Butter a baking sheet or use a silicone baking mat (preferred).
- Bring about 1 inch of water to a simmer in a medium saucepan with a bowl fitted to sit just above the simmering water. Add the chocolate. When the chocolate is melted, remove the bowl from the heat and stir in the almonds. Spread on the baking sheet in a thin uniform layer. Let set for 5 minutes, then sprinkle with the salt. Chill in the refrigerator until firm, at least 2 hours.
- Break the bark into 1- to 2-inch pieces. Store in a cool, dry place, stacked between layers of foil or parchment in an airtight container. The bark will keep, tightly sealed in your pantry, for up to a week.

- Line a 9x13 inch baking pan with parchment paper. Set aside. Put chopped almonds In a skillet. Cook, stirring often over medium high heat, until golden brown. Remove from heat.
- In a metal bowl over a pan of simmering water, melt chocolate chips and shortening until smooth. Remove from heat and stir in 1/2 the toasted almonds. Spread onto the prepared baking pan. Sprinkle with remaining almonds, and chill 30 minutes, or until solid. Break into bite-size pieces to serve.

- Preheat oven to 375 degrees F (190 degrees C). Line 2 baking sheets with parchment paper.
- Roast almonds on 1 baking sheet in the preheated oven, stirring occasionally, until toasted, about 10 minutes.
- Microwave white chocolate melting wafers and butter in a microwave-safe bowl on medium-high for 1 minute 30 seconds; stir. Microwave until completely melted, 20 to 30 seconds more. Add almond extract and stir until smooth. Stir in toasted almonds.
- Spread chocolate mixture evenly onto the second baking sheet. Chill in the refrigerator until hardened, about 1 hour. Break into small pieces by hand.

Steps:
- In a small saucepan on low to medium heat, melt the chocolate with 1 tablespoon of the milk. Continue to add milk to the chocolate, 1 tablespoon at a time, until fully melted. The chocolate should have a smooth consistency.
- Add the remaining ingredients and mix well.
- Pour onto a cookie sheet lined with parchment paper or into a parchment lined 8x8 inch pan. Smooth the melted mixture to a desired thickness and smoothness.
- Let cool in your refrigerator for approximately 30 minutes or until solid.
- Break into pieces and serve!

I received an email this morning with a few copycat recipes in it. Usually, all the recipes that I receive are already posted, but I don't see this one so I thought I would add it. This is a microwave recipe.

- Place almonds and butter in a 9-inch glass pie plate. Microwave on high (maximum power) 4 to 5 1/2 minutes, or until almonds are toasted, stirring twice during cooking. Set aside.
- Place chocolate in large microwave proof mixing bowl and microwave on high (maximum power) 2 1/2 to 3 minutes, or until softened. Stir in almonds and pour onto waxed paper lined baking sheet. Spread to desired thickness and refrigerate until set.
- Break into serving size peices.

- In 2 quart heavy saucepan,Combine sugar, milk, corn syrup, and salt.
- Cook,stirring constantly until sugar dissolves& mixture comes to a boil.
- Cook without stirring to soft ball stage (234).
- Remove from heat& add butter, do not stir.
- Let cool til lukewarm,& add vanilla.
- Beat until mixture thickens& spread is creamy.
- Add the toasted almonds.
- Spread about 1/2 inch thick on wax paper lined baking sheet.
- Let cool before break into pieces.
