TRADITIONAL BABA GHANOUSH
A traditional recipe for this eggplant dip. It consists of baked eggplant with garlic, lemon juice, and tahini sauce. Dip into this with pita bread and you have yourself a delicious-and-light appetizer.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Arrange oven racks so you have one low and one high in the oven.
- Cut a shallow slit along the side of the eggplant and place into a baking dish.
- Roast in preheated oven on the lower rack until the eggplant is completely shrunken and soft, about 40 minutes. Move dish to higher rack and continue baking until the skin is charred, about 5 minutes more. Let eggplant cool until cool enough to handle.
- Peel and discard skin from eggplant. Put eggplant into a bowl; add tahini, garlic, lemon juice, red pepper flakes, and salt. Stir until ingredients are evenly mixed. Drizzle olive oil over the baba ghanoush and garnish with parsley.

BABA GANNOUJH -- MIDDLE EASTERN EGGPLANT SPREAD
This is a delicious and very simple recipe if prepared in a food processor or blender. A wonderful spread to serve with pita bread, kalamata olives, feta, and tomatoes. This recipe calls for Japanese eggplant, which can be used whole without peeling or draining...more vitamins, less hassle! If you can only find "regular" eggplant (the large, very dark purple, almost black kind), I recommend you prepare it first by lightly salting and draining it for 30 minutes or so to remove bitterness prior to roasting. You may also wish to remove the skin as a matter of personal preference.

- Preheat oven to 400°F and prepare a baking dish that will accommodate the eggplant with cooking spray.
- Halve each eggplant lengthwise, sprinkle with salt, and place cut side down in the baking dish; spray skin with cooking spray, then roast until tender when pierced, about 20-25 minutes.
- Place all ingredients in the bowl of your food processor fitted with the steel blade, and blend until smooth.
GRILLED BABA GANOUSH
Baba ganoush is a classic Levantine eggplant and tahini dip that is beloved throughout the Middle East. The main variations are whether yogurt is included (it's generally added to smooth out the flavor of the garlic) and how the eggplant is cooked. Our version calls for grilling the eggplant and skipping the yogurt to allow the charred smoky flavor to really shine.

- Preheat a grill to medium high and brush the grates with olive oil.
- Pierce each eggplant all over 5 to 6 times to prevent splitting and help the interior cook all the way through. Place on the grill and cook, turning them every 5 minutes to make sure they're charred equally on all sides, until the flesh is very soft when pierced with the tip of a paring knife, 25 to 35 minutes (see Cook's Note). Transfer to a cutting board and let cool for 5 minutes.
- Peel each eggplant under cold running water, then return it to the cutting board. Finely chop the flesh and transfer it to a large bowl. Add the tahini, lemon juice, garlic and 1 teaspoon salt and mix well. Taste and add more salt, if needed.
- Transfer the baba ganoush to a serving bowl and make divots in it using a spoon. Drizzle with the 2 tablespoons olive oil and sprinkle some sumac on top if using. Serve with pita. The baba ganoush will keep in an airtight container in the refrigerator for up to 4 days.
BABA-GANOUJ ( BABA GHANOUSH / BABA GANNOUJH )
This is a Middle Eastern dip made of eggplants and tahini. Roasting the eggplants under a broiler or in the oven gives it a nice smokey flavor.

Steps:
- Wash the eggplants, and pierce the skin with a fork. Heat in a 400-degree oven for approximately 45 minutes, or until the skin blisters, and the eggplant collapses.
- Wait for the eggplant to cool, then separate the pulp from the skin. Squeeze the pulp to remove the juice (which is bitter), and mash to break up any large pieces.
- Finely mince the garlic, and cook in a pan with a little oil until lightly browned. Mash the garlic, and stir into the eggplant. Mix in the lemon juice, salt and tahini, adjust amounts to taste. Drizzle with olive oil and minced parsley (optional).
- Refrigerate if desired, and serve with flatbread, chips, or by itself.

- Preheat the oven to 450 degrees F (230 degrees C). Lightly oil a baking sheet.
- Halve eggplants and brush cut sides with olive oil. Place face-down onto the prepared baking sheet.
- Roast in the preheated oven until softened, 20 to 25 minutes. Remove from oven and let cool, about 30 minutes.
- Scoop flesh out of skins and place in a mesh strainer. Discard skins. Press down on flesh to remove liquid or drippings. Transfer eggplant flesh to a food processor. Add lemon juice, tahini, garlic, cumin, and chile powder. Drizzle olive oil on top of everything. Blend well, 45 seconds to 1 minute.
- Mix in plain yogurt and season with salt. Serve with a sprinkle of paprika over top for garnish.

BABA GHANOUJ - MIDDLE EASTERN EGGPLANT DIP
This is a classic Middle Eastern appetizer. I was given two small Chinese eggplants from Uncle Bob's garden, and decided to try my hand at this recipe. I'm not much of an eggplant fan, perhaps it's the seeds, or the tough purple skin, or maybe I've just had it overcooked and mush too many times. This dip was PERFECT though. Served it as a spread on homemade falafels, and had the leftovers with pitas.

Steps:
- Preheat oven to 350.
- Line baking sheet with foil and spray lightly with non stick cooking spray.
- Slice egglplant(s) in half lengthwise, and place face-down on baking sheet.
- Bake for 30-45 minutes, or until very tender.
- Cool until comfortable to handle.
- Scoop out the eggplant flesh and discard the skin.
- Place in food processor wth garlic, lemon juice, tahini, salt and corriander.
- Puree until smooth.
- Add minced parsley and pulse to combine.
- Pour into bowl, check for salt, add pepper and cayenne (if using).
- Chill for half hour, or until ready to serve.
- Top with a drizzle of olive oil and some parsely.

Steps:
- Broil eggplants with skin on, turning frequently, until skin is lightly charred and eggplants are fairly soft.
- Alternately, slice eggplants in half lengthwise and place on an oiled cookie sheet.
- Broil in oven or bake at 450oF until fairly soft.
- Allow to cool enough to be handled.
- Remove most of skin, and mash eggplant.
- If you don't mind a little grayness in the color, allow a little charred skin in with the pulp; it will add a pleasant smoky flavor.
- Fit food processor with steel blade.
- With machine running, drop in garlic cloves.
- Add tahini, lemon juice, and water; blend until thoroughly combined.
- Add eggplant, and pulse until coarsely pureed.
- Add salt and red and black pepper to taste.
- Refrigerate for 1-2 hours for flavor to develop.
- Adjust seasonings, including tahini if desired.
- Garnish with parsley, pine nuts, and pomegranate seeds as desired.
- Serve with pita bread or veggies.

- Preheat oven to 450° F. Cut ends off eggplant and cut lengthwise in half, Cut peppers in half and remove seeds. Generously oil and salt both eggplant peppers and place flesh side down onto a foil line rimmed pan. Roast in oven for 40 minutes, until eggplant is soft and the red peppers skins are charred. Remove from oven and allow to cool for 20 minutes.
- While the vegetables are cooling, In a large bowl mix the tahini, lemon juice, 2 tablespoons of the olive oil, yogurt, minced garlic, cumin, smoked paprika, salt, and pepper until smooth and well combined.
- Remove the skins from the peppers, chop the flesh to a fine mince and to the spiced sauce bowl. Separate the flesh from the eggplant skin using a spoon, remove any large clumps of seeds. Place the pulp into a mesh colander (strainer) over a small bowl. Using gentle pressure press down on the eggplant to allow any excess liquid to drain. Place eggplant into the spices sauce bowl and using a fork mash until completely incorporated, leaving some chunky pieces of eggplant. Garnish with parsley and red pepper flakes, optional: top with a dollop of harissa paste. Serve at room temperature.
