Steps:
- Combine first 10 ingredients until well mixed. Place chicken in a 4- or 5-qt. slow cooker; add broth mixture. Cook, covered, on low until tender, 3-4 hours. Remove chicken; when cool enough to handle, coarsely shred meat with 2 forks. Set aside., In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return chicken to slow cooker; add noodles. Cook, covered, on low for 15 minutes. Stir noodles; cook until thickened and noodles are tender, 15 minutes longer. Serve with green onions.

CROCK POT ORANGE CHICKEN
After not finding anything in terms of crock pot orange chicken on Zaar, I found this recipe at About.com, then made a couple of changes to suit my family's appetite and tastes. This produces a very strong, tangy sauce, which may be to some people's tastes and not quite to others. Give it a whirl and see if it's for you!

Steps:
- Cut chicken breasts into bite-size pieces. Place in the slow cooker.
- Sprinkle flour over chicken and toss well to coat.

- Put carrots, bell peppers, garlic, then the chicken, ginger, salt, pepper and frozen orange juice in crock pot. Cover and cook on LOW 4 to 6 hours. Serve chicken on hot cooked rice on platter. Top with orange segments and green onions. Serve chicken liquid in gravy boat, if desired. Makes approximately 4 servings.
- Notes: I like to use about 3 teaspoons fresh ginger, finely minced, but if you don't have fresh, use the ground. If you don't like ginger, leave it out. Thicken up the sauce with a cornstarch mixture (2 Tbsp water + 1 Tbsp cornstarch); mix until cornstarch is completely dissolved. Mix into sauce and let sit for a minute). I like to make some stir fry Chinese veggies to go with this. I use baby bok choy, baby corn, water chestnuts, bamboo shoots and broccoli.

CROCK-POT MEXICAN ORANGE CHICKEN (POLLO CON NARANJA)
My husband had open-heart surgery when we were living on the Texas-Mexican border in 2001. The wife of his heart-surgeon, Velda de La Garza, wrote a heart-healthy Mexican cookbook (*Healthy Mexican Cooking*), which we purchased while he was in the hospital. This dish is one of our favorites -- an easy Mexican take on that old favorite, Orange Chicken. We found it needed a little more spice than called for; you could either up the cayenne or leave the jalapeno seeds in. But then we like spicy food!

Steps:
- Set crock pot to high.
- Add orange juice, garlic, pepper, cumin, cayenne, jalapeno and salt to blender or food processor and blend until smooth.
- Place chicken pieces in crock pot and pour orange juice mixture over chicken. Top with onions and potatoes.
- Cook for 6 hours on high. Internal chicken temperature should reach 160 before serving, and the meat should fall off the bone.
- Great served over rice!
ORANGE SLOW COOKER (CROCK POT) CHICKEN
This is a work in progress. I got a version of this from a friend and adapted it to what I had in the fridge. It's really rich so cutting down the butter or making substitutions would probably work. It's so yummy though, you won't be able to stay away from the left overs! We served this with rice and peas.

- Layer chicken thighs on top of onions in slow cooker.
- Melt butter and mix with remaining ingredients.
- Pour over chicken and onion and cook on high or low until it's done. It took about 5 hours on high for my slow cooker, which I think runs hot.
- Note: The original recipe calls for lemon juice and zest and you could totally cut down on the butter. Next time I make this I will probably use a 1/4 cup of butter and then add some chicken stock.

- Cover chicken in flour and shake off the excess. Brown chicken pieces in olive oil in skillet or slow cooker if have browning setting. Doesn't have to be completely cooked, just browned. Put browned chicken in slow cooker. Mix all remaining ingredients together. Please note, I add a splash of soy sauce and about 1/8 cup honey to mine and sometimes garlic powder. Add your favorite flavors, pour over chicken and stir. Slow cook on High about 2 hours or Low about 4 hours. Serve over rice, noodles or mixed veggies.
