BLEU CHEESE BALL

This is a great way to serve your cheese ball during November and December holiday. Especially, because you can make the cheese ball the day before and garnish it just before serving, next day. I saw this idea on-line and thought it would be a great way to serve my Blue Cheese Ball. You can do this with any of your own cheese...

Bleu Cheese Ball image

Steps:

  • 1. Place the cream cheese and bleu cheese in mixer bowl and beat until soft. Add the bourbon and mustard. Blend well. Shape into a ball. Roll lightly and evenly in the bacon bits or sesame seeds or nuts or a combination of all. Wrap in wax paper and refrigerate overnight.
  • 2. This is a great cheese ball weather you decorate it or not- great for a summer BBQ without the turkey deco!

3 pkg 3 oz. each cream cheese, softened (9 oz. total)
4 oz blue cheese, crumbled
2 Tbsp bourbon or wine or fruit juice
3/4 tsp dry mustard
garnish crispy bacon bits, toasted sesame seeds or nuts
garnish crackers and pretzels

Bacon, Cheddar and Swiss Cheese Ball image

Steps:

  • In a large bowl, beat cream cheese and sour cream until smooth. Stir in shredded cheeses, 1/2 cup bacon, 1/4 cup pecans, onion, pimientos, pickle relish, salt and pepper. Refrigerate, covered, at least 1 hour., In a small bowl, mix parsley, poppy seeds and remaining bacon and pecans. Spread half the parsley mixture on a large plate. Shape half the cheese mixture into a ball; roll in parsley mixture to coat evenly. Cover. Repeat. Refrigerate at least 1 hour. Serve with crackers.

Steps:

  • In a medium bowl, stir together the cream cheese, blue cheese, Cheddar cheese, onion and Worcestershire sauce. Transfer to a separate bowl that has been lined with plastic wrap. Cover and refrigerate overnight.
  • The next day, gather the cream cheese mixture into a ball. Spread the walnuts out on a dinner plate. Roll the cheese ball in nuts until coated. Refrigerate or serve immediately.

Steps:

  • Place the bacon in a medium skillet and heat over medium heat. Cook the bacon until almost entirely crispy, about 10 minutes. Add the shallots and cook for an additional 2 minutes. Using a slotted spoon, scoop the bacon mixture into a medium bowl. Add the cream cheese and gorgonzola and mix well with a rubber spatula. Using a 1-tablespoon ice cream scoop, scoop little balls of the cheese mixture and roll them between your palms to smooth. Place on a plate, cover and refrigerate for at least 1 hour.
  • When ready to serve, allow the balls to sit at room temperature for 5 minutes. Mix together the pretzels and chives in a small bowl. Roll the truffles in the crushed pretzel mixture and serve.
