BACON BUNDLED GREEN BEANS

Green bean bundles are a fun and different holiday side dish. This version is sweet and savory with crisp green beans wrapped in caramelized bacon. Pre-cooking the bacon means it won't shrink as much as bacon traditionally would when baked. These green bean bundles have an amazing flavor. Your guests will be impressed when these are on your holiday table. No need for them to know how easy this side dish is to prepare.

Steps:

  • Blanch green beans and set aside.
  • Preheat oven to 350 degrees. Line a baking sheet with parchment.
  • Fry bacon in batches until slices are beginning to brown along the edges but still underdone and pliable, about 5 minutes.
  • Transfer to a paper towel-lined plate and let cool.
  • You can either cut the bacon slices in half and make 16 smaller bundles or do larger bundles with 8. Divide the green beans equally and then wrap the bacon around each bundle. Put the wrapped bundles on the lined baking sheet, loose ends of the bacon underneath.
  • Sprinkle brown sugar over bundles.
  • In a small bowl, whisk together butter, salt, and garlic powder. Then pour the butter mixture over the top.
  • Roast for 20-25 minutes.
  • Serve immediately.

8 slice(s) bacon, thick
6 tablespoon(s) unsalted butter, melted
1 1/2 teaspoon(s) salt
3/4 teaspoon(s) garlic powder
1 1/2 pound(s) green beans, blanched
1/4 cup(s) packed light brown sugar
