BACON WRAPPED STUFFING BALLS
This family recipe dates back to the 1930's, when my grandmother started making these hearty breakfast rolls. Photo by a Taste of Home Recipe tweaked a bit.What can I say I'm a tweaker.

Steps:
- 1. In a small skillet, sauté onion,and celery in butter until tender. In a large bowl, combine the Stove Top Stuffing,and remaining seasonings;toss to mix evenly. Add onion mixture, and egg ; toss lightly to coat bread mixture.
- 2. Roll mixture into 1 1/4- inch balls. Wrap a bacon strip around each ball. Secure with a toothpick. Repeat with remaining ingredients.(here is where you may need more bacon slices(it depends on how big you make the balls). I like to make small ones and use the whole pound of bacon. These freeze well, after baked and cooled.
- 3. In a large skillet, cook bacon roll-ups on all sides over medium heat for 18 minutes or until bacon is crisp and a meat thermometer inserted into stuffing reads at least 160^. Drain on paper towels. Makes 12 or more.
THANKSGIVING BACON STUFFING
This stuffing recipe has been in my family for decades. How can you go wrong with bacon? Whether it be baked in muffins tins or right inside the turkey, this is sure to be a hit!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place bacon in a large skillet and cook over medium-high heat until cooked through but still slightly soft, 5 to 10 minutes. Drain the bacon slices on paper towels, retaining bacon drippings in the skillet.
- Melt butter in a separate skillet over medium-high heat; saute onion and celery until softened, about 5 minutes. Stir bacon and poultry seasoning into onion mixture.
- Mix onion-bacon mixture and bread pieces together in a large bowl; fold in eggs. Spoon bread mixture into muffin cups.
- Bake in the preheated oven until tops are crispy, about 25 minutes.

- Saute celery in margarine until soft.
- Combine all other ingredients, except bread cubes in a large bowl.
- Gently mix in bread cubes.
- Portion stuffing into 12 greased muffin cups.
- Bake at 325º F.
- for 25-30 minutes.
- Remove from muffin cups; serve hot.

CHESTNUT, BACON & CRANBERRY STUFFING

Steps:
- Soak the cranberries in the port for an hour. Fry the onion and bacon gently in the butter, until the onion is tender and the bacon is cooked. Add the garlic and fry for another minute or so.
- Cool slightly, then mix with all the remaining ingredients, including the cranberries and port, adding enough egg to bind - I find it easiest to use my hands. Fry a knob of stuffing in a little butter, taste and adjust the seasoning if necessary.
- To Cook: This stuffing can be baked in a dish, or rolled into balls that will be crisp on the outside and moist inside. To bake, press the stuffing into a greased ovenproof dish in a layer that is around 4cm thick. Bake at 190C/gas 5/fan 170C for about 40 minutes, until browned and, in the case of sausagemeat stuffing, cooked right through. Alternatively, roll into balls that are about 4cm in diameter. Roast the stuffing balls in hot fat (they can be tucked around the turkey or done in a roasting tin of their own) for 30-40 minutes, until crisp and nicely browned on the outside.

- Put the stuffing mix in a bowl and pour over 150ml boiling water. Leave the mix to absorb. When cool, add the sausagemeat, chestnuts and cranberries and bring everything together with your hands. Cut each rasher of bacon in half lengthways so you get 24 long strips of bacon.
- Cross two bacon strips, then roll a walnut-sized ball of the stuffing mix and sit it on the cross. Wrap the stuffing in the bacon and sit on a lightly oiled baking tray, cross-side up. Repeat to make 12 stuffing balls. Can be made up to two days ahead and chilled. Heat oven to 200C/180C fan/gas 6 and roast the stuffing balls for 25-30 mins until the bacon is crisp and the stuffing is cooked.
