BACON WRAPPED BBQ MEATLOAF STUFFED WITH CHEESE!
Well, this certainly isn't a boring meatloaf. There are so many layers of goodness and it's full of flavor. Really, anything wrapped in bacon is just on a whole other level. The cheese in the middle is an ooey, gooey surprise. Double the recipe if you're serving a family. After one bite I am not sure your family will ever want...

Steps:
- 1. Preheat oven to 375° F. Get out a 9x13 baking pan. Do not use a bread pan. You can line this with foil to help with clean up, or just spray with a non-stick spray. Set aside.
- 2. Keep hamburger in the refrigerator until the last minute. In a bowl, combine the bread crumbs, Parmesan cheese, garlic powder, salt, minced garlic, dry mustard, oregano, basil, pepper, onion and bell pepper. Stir it around a bit to get everything mixed. Add the 2 tsp bbq sauce and egg; mix. Grab the rest of the ingredients... this will go quickly so the "loaf" holds its shape.
- 3. Take the hamburger and add this to the bowl, QUICKLY mix together with clean hands... forget the spoon. Place 1/2 of the hamburger mix in the center of your pan. Make a "well" with your hand so it looks like a hollowed out 1/2 potato. Add 3/4 cup of the cheese and gently press it in.
- 4. Add the second half of the hamburger on top and press it together and shape like a log.
- 5. Lay the bacon strips on top of the loaf.
- 6. Smear the last 2 tbsp of bbq sauce on top of the bacon. Sprinkle brown sugar on top of the sauce and put this into the oven for 60 minutes. (temp should be 160°F internally)
- 7. After 60 minutes, you can sprinkle the remaining 1/4 c cheese on top and return it to the oven for 5 minutes, just to let the cheese melt. If you don't want to to this, you can just stuff all the cheese inside and leave the outside to the bacon and bbq sauce.
CHEESY BBQ MEATLOAF
My kids aren't a fan of regular meatloaf, it tasted bland they say. Soo I turned it up a notch and added BBQ sauce and cheddar cheese! No more complaints!

- Combine ground beef, eggs and 2 tablespoons of ketchup in a large bowl. Mix well, then add bread crumbs, Parmesan cheese, garlic powder, salt, oregano, basil, pepper, and onion. Set mixture aside. Line the bottom of a 9x13 inch pan with bacon, widthwise. Place half of the meat mixture across the top of the bacon. - Prep: Preheat the oven to 350°F (convection ovens to 320°F). Line a 9x5 inch loaf pan first with parchment paper and then with 2/3 of the bacon, leaving an overhang. OR line a rimmed baking sheet with baking parchment and lay 2/3 of the bacon on top if you want to bake without a pan.
- Make meat mix: Mix ground beef, eggs, breadcrumbs, onion, mustard and spices in a large bowl (I use a handheld mixer with the hook attachment to do this).
- Shape meatloaf: Shape a long log with 2/3 of the meat mixture and fit it inside the loaf pan (OR on top of the bacon on the baking sheet, if baking without a loaf pan). Make a crease down the middle and add the mozzarella cheese to it. Cover with the remaining meat mixture. Fold the bacon overhang on top and cover entirely with the remaining 1/3 of bacon. Spread with 1/3 of the barbecue sauce.
- Bake: Bake in the middle of the preheated oven for 40 minutes. Spread with another 1/3 of the barbecue sauce. Continue baking for another 20 minutes, then spread with the remaining sauce right as it comes out of the oven. Allow the meatloaf to rest for 5-10 minutes before slicing. If you baked in a loaf pan, VERY CAREFULLY drain it before removing from the pan (depending on your meat/bacon, a lot of juices can accumulate).
