Tuna Medallions with Bacon Vinaigrette, Pineapple Sauce, and Fresh Wasabi image

Steps:

  • Sear the tuna for 20 seconds on each side in a hot pan with the oil. The tuna should be seared on the outside and very rare in the middle. Hold at room temperature
  • For the vegetables: Melt the butter in a small sauce pot and add the 3 vegetables. Cook for 20 seconds and season with salt and pepper. Hold warm.
  • For the wasabi: Peel off outer bark with vegetable peeler. Grate in circular motion with small hand grater.
  • For the vinaigrette: Blend mustard and rice wine vinegar with hand blender. Add warm bacon fat. Add soy sauce. Reserve warm
  • For the sauce: Peel and cut pineapple into small chunks and pass through juicer. Reduce over low heat to syrupy consistency. Reserve at room temperature.
  • Assembly: Slice the tuna rectangles into 14 equal slices. Arrange 7 on each plate. Place a small mound of vegetables at the top of the plate. Dot each tuna slice with a small ball of grated wasabi. Spoon the bacon vinaigrette along the border of the tuna. Place a spoonful of pineapple sauce at the bottom of the plate.

4 ounces sushi-grade tuna, cut into rectangular shape
1 ounce olive oil
1 tablespoon butter
1 ounce thinly shaved julienne of fennel
1 ounce of julienne of shiitake mushrooms
1/2 ounce scallion greens, julienned
1 ounce fresh wasabi
1/2 tablespoon Dijon mustard
2 tablespoons rice wine vinegar
3 tablespoons rendered bacon fat, warm
1 tablespoon soy sauce
1 pineapple

Steps:

  • Wrap each tuna steak with a strip of bacon and secure with wooden skewers or toothpicks. Make the marinade: Combine all ingredients in a bowl. Set aside 2 tablespoons of the marinade. Marinate tuna steaks for about 15 minutes. Meanwhile, preheat oven to 400°F. Arrange tuna steaks on a baking pan and bake in the preheated oven for 10 to 15 minutes or until completely cooked. Make the wasabi cream sauce: Combine wasabi and reserved marinade in a saucepan over low heat. Add cream and bring to a simmer. Remove from heat and stir in sesame oil. Serve on the side or drizzle on top before serving.

MARINADE:
4 (4-ounce) tuna steaks, each about 1-inch thick
4 strips bacon, slightly cooked but not crisp
2 tablespoons butter, melted
1/4 cup soy sauce
2 tablespoons mirin
1 tablespoon lemon juice
1 teaspoon grated ginger
1 teaspoon minced garlic
1 tablespoon brown sugar

Steps:

  • In a spice grinder, coarsely grind peppercorns. Coat the tuna with the peppercorns, pressing them into the flesh of the fish. Add oil to a hot saute pan. Sear the tuna in the saute pan, for about 1 minute per side. Remove tuna from the pan and slice into 1/4 inch thick slices. In a saucepan, combine the soy sauce and orange juice and bring to a boil. Boil the soy sauce mixture until reduced by 70 percent and has achieved a syrup consistency. Cool. Whip the cream. Fold in the wasabi powder. Drizzle a little orange soy sauce onto each slice of tuna. Top with a little wasabi cream.

1 tablespoon whole black peppercorns
1 tablespoon whole green peppercorns
1 tablespoon whole red peppercorns
1 pound of sushi grade yellowfin tuna, cut into a long, thin strip
2 tablespoons canola oil
2 cups low sodium soy sauce
1 cup orange juice
1/2 cup heavy cream
2 tablespoons wasabi powder

This recipe came from my husband's cousin, who fishes for tuna off the Oregon coast each summer. The bacon helps hold the tuna together on the grill, and adds a nice moistness to the lean albacore meat. You could try it with other types of tuna, but I've only ever used albacore.

Steps:

  • Take as many bacon strips as you have tuna steaks, and lay bacon on a paper-towel lined plate. Microwave 2-3 minutes or until bacon is about half-cooked but still very pliable.
  • Preheat outdoor grill to medium-high.
  • Meanwhile, wrap a slice of cooled bacon around the perimeter of each tuna steak and secure to itself and to the fish with a toothpick or two. Depending on the size of your steaks, you might have to squeeze a bit to get the bacon to reach around, but a snug fit will hold the fish together when it shrinks during cooking.
  • Sprinkle both surfaces of tuna steaks with garlic powder & seasoned salt. Spray both sides lightly with cooking spray to prevent sticking to grill. (You can also use a fish grilling grid or basket).
  • Grill until fish is lightly browned and bacon is starting to crisp, about 5-7 minutes per side for well-done (I don't like any pink in my fish).
  • Note: I use the low-sodium Kirkland brand bacon that Costco sells, and Mazola Pure olive oil spray.

I've had the seared tuna in nice restaurants, but this is better than all of them. One tablespoon of wasabi sounds like a lot of heat, but somehow this cooking method mellows it to almost nothing, just leaves the flavor. Really really great.

Seared Tuna with Wasabi-Butter Sauce image

Steps:

  • Combine the white wine vinegar, white wine and shallots in a small saucepan over medium heat. Simmer until the liquid is reduced to about 2 tablespoons. Strain out shallot and discard, return liquid to the pan.
  • Stir the wasabi and soy sauce into the reduction in the pan. Over low heat, gradually whisk in butter one cube at a time allowing the mixture to emulsify. Be careful not to let the mixture boil. When all of the butter has been incorporated, stir in cilantro, and remove from heat. Pour into a small bowl, and set aside.
  • Heat a large skillet over medium-high heat. Brush tuna steaks with olive oil, and season with salt and pepper. Place in the hot skillet, and sear for 3 to 5 minutes on each side. Be careful not to overcook, this fish should be served still a little pink in the center. Serve with sauce.
