CANADIAN BACON BREAKFAST STACK
This is a lightened version of one my favorite breakfasts. Hot pepper sauce is necessity! Sprinkle it over the top before you dig in! Canadian bacon comes from the loin area of the hog so it is very lean and quite tender.

Steps:
- Place collards, onion and salt pork in a large saucepan. Cover with water and cook over medium heat, until greens are tender (about 15 to 20 minutes). Drain, discard pork, reserve the greens and onions and set aside.
- Spray a nonstick skillet with cooking spray. Heat skillet over medium high heat and add egg whites. Season with salt and pepper to taste and saute all together, stirring constantly until done to taste.
- Meanwhile, spray another nonstick skillet with cooking spray and heat over medium high heat. Saute Canadian bacon on both sides until lightly browned. Remove from skillet and drain on paper towels.
- To Assemble Stacks: Place bread slices on a broiler pan. Top each with 1 slice Canadian bacon and equal portions greens, egg whites and cheese. Broil until cheese bubbles and melts. Sprinkle chives on top and serve.

BACON BREAKFAST CUPCAKE

Steps:
- For the cupcakes: Preheat the oven to 350 degrees F. Line two 12-count muffin tins with paper cupcake liners.
- Combine the all-purpose flour, cake flour and baking soda in bowl; set aside. In a separate bowl, mix the sour cream, vanilla and eggs; set aside.
- Heat the beer and butter in a saucepan over medium-high heat until the butter is just melted. Stir in the cheese, remove from the heat and whisk in the brown sugar. Slowly add the beer mixture to the egg mixture, stirring. Fold/gently stir in the dry mixture, then fold in the bacon.
- Fill the muffin cups three-quarters full with the batter. Bake until an inserted toothpick comes out clean, 20 to 25 minutes. Let the cupcakes cool on a wire rack.
- For the hollandaise sauce: In the container of a blender, combine the egg yolks, lemon juice, Worcestershire, vinegar and hot sauce. Cover and blend for about 5 seconds.
- Put the clarified butter in a glass measuring cup. Heat in the microwave until completely melted and hot, about 1 minute. Set the blender on high speed and pour the butter into the egg yolk mixture in a thin stream; it should thicken almost immediately. Fold in the chopped parsley once the sauce has thickened. Season with salt and pepper. Keep the sauce warm until serving by placing the blender container in a pan of hot tap water.
- Top each cupcake with a fried egg and add some hollandaise. Serve warm.
BACON BREAKFAST CASSEROLE
Steps:
- In a large skillet, cook bacon in batches over medium heat until crisp. Remove to paper towels to drain., In a greased 4- or 5-qt. slow cooker, layer a third of each of the following: potatoes, reserved bacon and cheese. Repeat layers twice. In a large bowl, whisk eggs, milk, salt and pepper; pour over top. Cook, covered, on low until eggs are set, 4-5 hours. Turn off slow cooker. Remove crock insert to a wire rack; let stand, uncovered, 30 minutes before serving. If desired, sprinkle with parsley.

BACON AND EGG BREAKFAST TARTS
Perfect selection for a brunch, but also convenient enough for serving on a weekday. Instead of Canadian bacon, try using 1/2 cup diced cooked ham or 1/2 cup crumbled cooked bacon. Place 2 tablespoons of meat into each pastry cup.

- Preheat oven to 425 degrees F (220 degrees C).
- Prepare pastry for a one crust pie as directed on package. Divide pastry into 4 equal parts. Roll each part into a 6 inch circle on a well floured, cloth covered board with a floured, cloth covered rolling pin. Fit pastry over backs of large muffin cups (3 x 1 1/2 inch), or 6 ounce custard cups; make pleats so pastry will fit closely. If using individual pie pans or tart pans, cut circles 1 inch larger than inverted pans, and fit into pans. Prick surface. Place tarts on an ungreased cookie sheet.
- Bake until light brown, about 8 to 10 minutes. Cool 5 minutes, and carefully remove from cups. Reduce oven temperature to 350 degrees F (175 degrees C).
- Place 2 bacon slices in the bottom of each pastry cup. Sprinkle cheese over the meat, making slight well in centers. Break 1 egg into each. Add 1 tablespoon milk into each tart. Sprinkle with nutmeg and pepper. Place tarts on an ungreased cookie sheet
- Bake until eggs are soft cooked, about 15 to 20 minutes.

BACON AND EGG BREAKFAST BASKETS
This recipe is something a little different to serve at breakfast. They can be eaten hot or cold. Of course you can always use your own toppings.

Steps:
- Cut a slice from the top of each bun reserving the tops.
- Hollow out each bun, being careful to leave a thick shell.
- Saute bacon and onion in pan; place on absorbent paper to drain off any excess oil.
- Melt the butter in a saucepan; stir in the Worcestershire sauce.
- Brush the inside of buns with the half the butter mixture.
- Carefully break an egg into each bun.
- Spoon bacon and onion mixture over eggs.
- Season eggs; top with grated cheese; replace the bun lids.
- Brush each of the bun lids with the remaining butter.
- Bake in oven at 200 degree Celsius (400 degrees Fahrenheit) for 15 minutes or until eggs have cooked.
BACON BREAKFAST SANDWICHES
Steps:
- In a large nonstick skillet, melt butter. Beat the eggs, chives, water, salt and pepper; pour into skillet. Cook and stir gently until eggs are set. , Top each muffin half with eggs, bacon, tomato and cheese. Place on a baking sheet. Broil 2-3 in. from the heat for 1-2 minutes or until cheese is melted. Garnish with chives if desired.

- Preheat oven to 400°. Place bacon in a single layer in a 15x10x1-in. baking sheet. Bake until partially cooked but not crisp, about 10 minutes. Remove to paper towels to drain. When cool enough to handle, chop bacon; set aside., In a large bowl, combine potatoes and seasonings; spread evenly into drippings in pan. BACON BREAKFAST CAKE

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9 inch round cake pan.
- Place the bacon in a large, deep skillet; cook over medium-high heat, turning occasionally, until lightly browned but still soft, about 7 minutes. Drain the bacon slices on a paper towel-lined plate. Place the bacon on the bottom of the greased cake pan, overlapping slices as necessary to fit. Sprinkle the bacon strips with the brown sugar.
- Combine the prepared cake batter, maple extract, and maple syrup in a large bowl, mixing well. Pour the batter over the brown sugar and bacon in the cake pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool cake slightly and remove from pan by inverting onto a serving platter. Cut into wedges to serve.

- Spray a 9x13 inch casserole dish with nonstick spray or grease with butter.
- Place the shredded cheese in the dish and sprinkle with a tablespoon of flour. Toss together with your fingers to distribute evenly.
- Sprinkle bacon evenly over cheese.
- Beat the eggs, milk, salt, pepper, seasoned salt, dry mustard, onion, garlic, and paprika.
- Pour over the bacon and cheese.
- Cover and refrigerate overnight.
