Baked 2-Cheese & Bacon Grits Recipe - (4.7/5) image

Steps:

  • Preheat oven to 350°F. In a large saucepan, cook bacon over medium heat until crisp, stirring occasionally. Remove pan from heat. Remove bacon with a slotted spoon; drain on paper towels. Add water, stock, garlic powder, and black pepper to bacon drippings; bring to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, 5 to 7 minutes or until thickened, stirring occasionally. Remove from heat. Add Velveeta and butter; stir until melted. Stir in milk. Slowly stir in eggs until blended. Transfer to a greased 9x13-inch baking dish. Sprinkle with bacon and shredded cheese. Bake, uncovered for 40 to 45 minutes or until edges are golden brown and cheese is melted. Let stand 10 minutes before serving. TO FREEZE: Cool unbaked casserole, cover, and freeze. To use, partially thaw in refrigerator overnight. Remove casserole from refrigerator and set on counter 30 minutes before baking. Preheat oven to 350°F. Bake grits as directed, increasing time to 50 to 60 minutes or until heated through and a thermometer inserted in center reads 165°F.

1/2 cup 2% milk
4 large eggs, lightly beaten
2 cups shredded white cheddar cheese, about 8-ounces

I needed to bring a dish to a friend who was gluten free and it also needed to be soft food. My first thought was grits! I threw this together. I hope y'all enjoy this too. It's great for breakfast, lunch or dinner.

Bacon and Cheese Grits Casserole image

Steps:

  • 1. Preheat the oven to 350 degrees. In a large saucepan fry the bacon slices. When done put them aside. (when bacon is cooled crumble). Pour out all but 2 tablespoons of the bacon grease. Saute the onions in the grease till translucent.
  • 2. Add the broth to the pot with with the onions. Bring to a boil. Add the garlic powder, salt and pepper. Slowly add the grits stirring with a whisk.
  • 3. Lower the heat and simmer for 5 minutes.
  • 4. Remove from heat and stir in butter, 1/2 cup of sharp cheddar and 1/2 cup of parmesan cheese until melted. Add the crumbled bacon.
  • 5. In a small bowl mix the eggs and half and half. Pour the mixture into the grits and whisk till all in incorporated. Pour into a greased 2 quart glass pan (8x8 or 11x7). Sprinkle with remaining 1 cup of cheddar cheese. Bake at 350 uncovered for about 45 minutes.

  • Preheat oven to 350°. In a large saucepan, bring water, salt and pepper to a boil. Slowly stir in grits. Reduce heat to medium-low; cook, covered, about 5 minutes or until thickened, stirring occasionally. Remove from heat. Pour grits into a greased 2-1/2-qt. souffle dish; cool completely., In a large bowl, whisk eggs; pour over grits. Sprinkle with bacon and cheese., Place casserole in a larger baking pan; add 1 in. of hot water to larger pan. Bake, covered, 45 minutes. Uncover; bake 30-40 minutes longer or until knife inserted in the center comes out clean. Remove casserole from refrigerator while oven heats. Place casserole in a larger baking pan; add 1 in. of hot water to larger pan. Steps:

  • In a medium saucepan, cook bacon and jalapeno (optional) over medium heat, stirring occasionally, until bacon is browned, about 8 minutes. With a slotted spoon, transfer bacon and jalapeno (if using) to a small bowl. Remove pan from heat and carefully add 4 1/2 cups water (fat may sputter).
  • Bring liquid to a boil over high and whisk in grits.   • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
  • Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly.
