  • Place the tilapia, lemon juice, coriander, and parsley in a bowl; toss until fillets are evenly coated. Refrigerate at least 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
  • Arrange the fillets in the bottom of the prepared baking dish; top each with tomato. Drizzle remaining marinade over the fillets. Cover with aluminum foil.
  • Bake in preheated oven 15 minutes. Remove foil and bake uncovered another 5 minutes.

Steps:

  • Preheat the oven to 400 degrees F. Toss the potatoes with 1 tablespoon olive oil, 1 teaspoon thyme, 1/4 teaspoon salt, and pepper to taste in a bowl. Coat a rimmed baking sheet with cooking spray; add the potatoes and spread in an even layer. Roast until browned and crisp, tossing halfway through, about 35 minutes.
  • Meanwhile, toss the tomatoes, olives, capers and garlic with 1 teaspoon olive oil, 2 tablespoons vinegar and 1 teaspoon thyme in a bowl. Coat another baking sheet with cooking spray; add the tomato mixture and spread in an even layer. Roast until softened, 15 minutes.
  • Mix the remaining 2 teaspoons olive oil and 1 teaspoon thyme, 2 tablespoons vinegar, 1/4 teaspoon salt, and pepper to taste in a bowl; brush on the fish.   • Cut the onion into 8 slices.
  • Cut the tomatoes into 8 slices.
  • Juice one lemon and slice the other two lemons into 8 slices.
  • Wash filets.
  • Place each filet on a 12" piece of heavy-duty foil.
  • Place 2 onion slices, 2 tomato slices, and 2 lemon slices on top of each filet. Sprinkle with 1/4 of the lemon juice.
  • Salt and pepper to taste.

  • Mix all of the dry ingredients (bread crumbs to cheese) in a plate.
  • Dip your filets in the melted butter then dredge in the bread crumb mixture.
  • Place in a baking dish that is large enough the filets will not overlap (make sure you spray or grease your dish).
  • Place the sliced onions mushrooms and pepper (if used) on top of filets.
  • Pour any left over melted butter over this and sprinkle juice over this.
  • Cover with foil and bake in a 350º oven for about 20 minutes (check to see if fish is starting to flake easily, if not bake a little longer).
  • Remove foil and bake for another 10 minutes or until the crust turns a light golden brown color.
