CHEESE BITES (TOTALLY ADDICTIVE)

Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Cheese Bites (Totally Addictive) image

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Spicy cheese bites image

Steps:

  • Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
  • Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
  • When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

  • Prepare bleu cheese dip by placing bleu cheese, cream cheese, vinegar, olive oil, and pepper in a food processor and mixing until well combined. Drizzle in milk 1 Tbsp at a time while mixing until desired consistency is achieved. It should be thick like frosting. Scoop into a large plastic bag and set aside.
  • Sauté asparagus and/or red onion in a large saucepan over medium heat until tender. Season with salt and black pepper. To properly caramelize the onions, make sure to keep the lid on to lock in moisture and get them really soft. Set aside.
  • Prepare balsamic reduction by placing balsamic vinegar in a small saucepan over medium heat, stirring occasionally and being careful not to boil. Cook for about 10 minutes or until the liquid has reduced by about half and a wooden spoon scraped across the bottom leaves a visible line – it should appear somewhat “syrupy.” Pour into a small ramekin for serving.

  • Prep: Thaw the Rhodes Thaw, Rise, & Bake dough according to package directions. Let it rise for 1 hour at room temp like the packaging says.
  • Assemble: Preheat oven to 400 degrees F. Melt your butter inside a 9-inch baking dish. Slice the bread dough (if using a loaf) into about 21 large chunks (see photos above). Toss the bread pieces in the butter to get them nice and coated. Nudge them into an even layer. Sprinkle the cheese on top, and add a sprinkle of garlic powder.
  • Bake: Bake 28 minutes. Rolls will be starting to get golden brown. I added a little egg wash (1 beaten egg, brushed over the tops of the bread) after 28 mins and baked them for 3 more minutes. This is optional but adds a nice shine and golden brown color to the bread. Either way, do bake for 31 mins total.
  • Serve + Store: Enjoy while hot + fresh from the oven! Store leftovers, well covered, in the fridge for a few days. This is best enjoyed fresh, however.
