TRADITIONAL BAKED STUFFING
This recipe was handed down by my great-grandmother. It is a family favorite that we make every Thanksgiving. This traditional stuffing has a crispy top with a moist inside. No need to worry about stuffing the turkey this year! This tasty side-dish bakes in a casserole dish or Pyrex bowl.

Steps:
- Mix onion, celery, parsley, melted butter, egg and poultry seasoning in a large bowl. Stir.
- Add bread crumbs and stir with a spoon to evenly distribute the mixture.
- Slowly drizzle milk over bread while stirring until bread cubes are moist but NOT soggy. (May need a bit more or less milk than this recipe calls for.).
- Stir in salt and pepper.
- Pour in a greased casserole dish or Pyrex bowl. (A 9x14" baking dish will do in a pinch).
- Bake at 350 degrees for 35-45 minutes or until bread cubes on top are crispy.
HOMEMADE DRESSING
This dressing recipe has been passed on from generation to generation. Our Thanksgiving would not be complete without this dressing! Throughout the years, we have added mushrooms. But when kids came into the picture again, we had to take them out. This dressing is so good that we would make 2 pans of it, one with onions and one without for the relatives that couldn't tolerate onions any longer (usually the older generation). Regardless, we always have this dressing!

Steps:
- Saute the onion and celery in the butter until tender. Add mushrooms if you would like!
- Combine all ingredients in a large bowl; mix well. I use a healthy sprinkling of poultry seasoning -- that is what makes it smell soooo good while cooking!
- Place into a 13x9x2 inch baking dish.
- Bake at 350 degrees for 25 to 30 minutes.
- If dressing begins to look too dry, add more chicken stock. (While waiting on the turkey to finish, you might leave the dressing in the oven -- in this case, add more chicken stock!).

BASIC BAKED FISH -EASY DRESSING
Simple and can be used on any fish fillets or steaks. From a seafood recipe booklet put out by The American Cooking Guild. The recipe doesn't specify how much fish this is for so I guessed and you can adjust depending on the amount of fish you'll cook.

Steps:
- Preheat oven to 475-500 degrees.
- Blend the ingredients, except for the fish and baste the fish with the sauce.
- If the fish is an oily or "stornger" type of fish (Bluefish), season further with any commercial seafood seasoning.
- Bake fish in a single layer in a shallow pan for 6-7 minutes for fish 1/2" thick or for 7-9 minutes for fish 3/4" thick.
- Remove from oven as soon as the fish whiten inside and begins to flake when fork-tested.
- Above all, do not overcook.

BAKED CHICKEN AND DRESSING
This dish is good enough for company. It is an easy dish to make and looks good. The chicken stays very moist.

Steps:
- Place chicken in baking dish, sprayed with no-stick spray.
- Put cheese on top of each piece of chicken.
- Mix soup and water and pour over the top.
- Mix melted margarine with dressing and sprinkle on top of cheese.
- Bake 1 hour, uncovered, at 325 F degrees.
THE BEST TURKEY DRESSING (STUFFING)
This dressing is adapted from "The Silver Palate Cookbook. It's rich and is always a big hit. No other bread is needed on the Thanksgiving table. Cook your turkey about 12-15 minutes per lb. at 325 degrees, basting frequently.

Steps:
- Melt 6 tablespoons butter in a large frying pan. Add onions. Cook over medium heat until onions are quite soft and tender, about 15 minutes. Transfer onions and butter to a large mixing bowl. Set aside. Melt another 6 tablespoons butter in the same frying pan. Add apple. Cook over medium heat, until lightly colored but not mushy. Transfer apples and butter to mixing bowl with onions.
- Crumble sausage into frying pan. Cook over medium heat, until lightly browned. With a slotted spoon, transfer sausage to mixing bowl. Reserve fat. Add remaining ingredients, except eggs and stock, to mixing bowl. Mix well. Add eggs. Mix. Add enough stock to bowl to make a moist, but not runny, mixture. Add fat to stuffing if desired. Stuff a 20-lb. turkey. If cooking dressing separately from turkey, pour fat over dressing in casserole. Bake at 325 degrees Fahrenheit for 45 minutes, or until nicely browned and cooked through.
