BACALHAU PORTUGUESE AO FORNO (SALT COD WITH TOMATOES AND OLIVES)
Portuguese recipe for baked cod with potatoes, tomatoes and lots of olive oil. You need to soak the cod in water overnight to remove the salt. Serve hot.

Steps:
- Soak cod in a large bowl of water in the refrigerator for 24 hours, changing soaking water 4 times to remove excess salt.
- Drain water off cod; add lemon juice and salt. Let marinate in the refrigerator, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C).
- Arrange layers of cod, potatoes, onions, and tomatoes in a large baking dish. Place bay leaves on top. Drizzle olive oil over baking dish and season with salt.
- Bake in the preheated oven until potatoes are tender and cod flakes easily with a fork, about 30 minutes. Add olives and parsley and continue baking until heated through, about 3 minutes more.

Steps:
- Set your oven to 400 degrees F.
- Clean the cauliflower and parboil the entire head in lightly salted boiling water for 10 minutes. Drain and then separate into fleurettes. Set aside in a warm place (ie bowl with a lid).
- While the cauliflower is cooking, grease an ovenproof casserole dish with olive oil. Arrange the fish in the dish, then sprinkle it with the onion and garlic. Season with salt and pepper and the chile powder if using. Pour the wine over the fish and drizzle with the olive oil.
- Bake the fish for 20 minutes. About 5 minutes before the fish is due to be done, add the cauliflower to the pan.
- Garnish with the parsley and serve immediately.
BAKED FISH FILLETS
Steps:
- Preheat oven to 400 degrees. Generously grease a shallow 1-quart baking dish. Melt shortening in heavy medium skillet over medium heat. Add onion and pepper; saute until golden. Stir in flour, brown sugar, marjoram, salt, thyme, and pepper until smooth. Very gradually stir in tomatoes. Bring to a boil, stirring constantly until sauce has thickened. Arrange fish in baking dish; top with sauce. Place on rimmed baking sheet and bake 12 to 15 minutes or until fish flakes easily.
PESCE LUPO AL FORNO (BAKED SEA BASS WITH SAGE)
If you never have tried to cook a whole fish, try this easy to make Italian styled fish recipe. It is done is less than 30 minutes and comes out with one of the most wonderful flavours. The sage in here will make it special. I love the delicate flavours of sea bass, but you could use any other whole fish (you just have to adapt baking time). Serve this recipe with a green salad and a lot of bread for dipping up the butter sage sauce.

- Preheat oven (425°F, 220°C).
- In a suited oven proved dish melt 1 tablespoon butter in the olive oil.
- Cut the lemon into slices.
- Clean sea bass and sprinkle some salt into the cavity and also 1 sprig sage.
- Coat the fin tail completely with salt. This looks pretty and will avoid the fin tail from burning while baking.
- Turn the fish in the butter-olive oil mixture on both sides and put fish into the dish. Slightly salt and pepper the upper side.
- Put fish in the oven for 10 minutes.
- Take fish out of the oven and turn it over. Arrange the four remaining sage sprigs around and under the fish. Add the lemon slices, but put them more on the border of the dish.
- Now cover the upper side with the bread crumbs and press them slightly on the fish, so that they stick better.
- Arrange the remaining tablespoon of butter on the breadcrumbs and put the fish again into the oven for another 10 minutes or until fish is done.
- Fish is done, when dorsal fin can be removed easily.
- Serve very hot with the butter still sizzling.
- Note on BREAD CRUMBS: I make them on my own, because for this dish they should be coarse. Take dried white bread and cut it into very thin slices. Then break it into larger bread crumbs.
- Note on the oven proved dish: I use an oven proved serving platter for this recipe. So I can serve it right out of the oven. An oven proved pan gives it a more rustic view.

- 1. PREHEAT Oven to 350* and bake for 20 25 minutes.
- 2. 1) DRAIN the fish and pat it dry.Brush the fish with 1 tablespoon of the olive oil, then season with paprika, pepper , and half of the garlic. PLACE the fish skin down in a baking dish pan and dot top with butter. Sprinkle with lemon juice.
- 3. (2) Combine potatoes in a small bowl with the remaining olive oil,garlic, and 1 teaspoon of salt. TOSS Well and arrange around the fish in the pan.. SPRINKLE the remaining salt over the fish.

- Ask the fish merchant to slice the fish, but don't separate slices so that fish looks whole. Place the fish in a baking dish and season with salt and pepper. Surround fish with tomatoes and mushrooms. Mix together oil and white wine. Pour over the fish and bake in a hot oven at 400 degrees for 30 minutes, basting occasionally. Mix together cilantro and yellow onion. Remove fish from the oven and sprinkle with cilantro and onion mixture. Bake 10 minutes longer. Garnish with lemon wedges. This is a very typical salted cod fish recipe here in Portugal, you'll find it in about just any restaurant. This is very easy to prepare, as usually you will have to soak the salted cod,for 24 hrs, changing the water 3-4 times. That's a must with any kind of salted cod-fish. I usually do this and then freeze it, that way I'm always prepared. I usually do this recipe with fresh new small potatoes skin and all, it's wonderful. But if the potatoes are not new then by all means peel them. I hope you all enjoy this recipe.

- After soaking the cod, remove from the water and dry well with a kitchen towel.
- Peel your onions and slice them into half moons also peel the garlic and chop it up.
- Under hot water remove the tomatoes skins and slice them up.
- In a rectangle casserole dish place in 1/2 of the olive oil and1/2 of the wine.
- Spread the onions, garlic, sliced tomatoes bay leaf, and the potatoes (if you can't find small find small potatoes use normal ones and have them cut into quarters, you also may add more potatoes if you like).
- Now place the cod over top of everything and drizzle the remaining wine and olive oil over each fillet.
- Keep basting the cod with the remaining olive oil so as not to dry out on you.
- Bake at 380°F for about 1 hour or when potatoes are cooked.
- Remove from oven and sprinkle with parsley (serve with a green tossed salad, and enjoy.
