BAHAMIAN BAKED GROUPER
This recipe is great for grouper fillets, but you can also use it with tilapia. It's both healthy and flavorful! You don't have to love fish to love this dish. Serve it with rice and cole slaw to complete the meal.

Steps:
- Arrange the grouper on a plate. Drizzle the lime juice over the fillets and season with salt, pepper, and red pepper flakes. Cover with plastic wrap and refrigerate overnight or 8 hours.
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
- Lay the fillets in the prepared baking dish in a single layer. Arrange the tomato slices, onion slices, and bell pepper slices atop the fillets. Cover with aluminum foil.
- Bake in preheated oven until the fish flakes easily, about 1 hour.

KEY WEST-STYLE BAKED GROUPER
Steps:
- Preheat oven to 325 degrees F (165 degrees C). Lightly butter a 9x13-inch glass baking dish and set aside.
- Season the grouper fillets with salt, lemon pepper, garlic powder, and onion powder; place into prepared baking dish. Spread about 2 tablespoons of softened butter over the top of each fillet. Pour in the lime and orange juices, then cover each fillet with 3 slices of lime and 2 slices of orange.
- Bake in preheated oven until fish is opaque and flakes easily with a fork, about 15 minutes.

BROILED GROUPER WITH CREAMY CRAB AND SHRIMP SAUCE
I modeled this after dishes I've had in restaurants at the beach. You can use any white fish. I served the fish and sauce over rice. It's fast, easy, and delicious!

- Preheat the oven broiler. Cover a medium baking dish with foil.
- Melt butter with cream in a saucepan over medium heat, and blend in Creole mustard. Cook and stir until thickened. Mix in crab and shrimp. Season with Cajun seasoning, salt, and pepper. Cook until heated through.
- Place grouper in the prepared baking dish, and rub with olive oil, lemon juice, and parsley. Season with salt and pepper.
- Broil grouper about 4 minutes on each side, until easily flaked with a fork. Spoon the crab and shrimp mixture over fish to serve.

I like the taste of Grouper and I had some crab on hand,so I decided to try to make a crust on top to keep the grouper from drying out while baking. I had all the other items listed either in the freezer or frig.We had a nice garden and grew the peppers,jalapeno's. Thou they do not freeze well,they can be used in something like this that is being baked.

- 1.Preheat the oven to 375 degrees F.
- 2.In a medium bowl, stir together the bread crumbs, red pepper, yellow pepper, green onions, jalapeno, butter, crab meat, and mozzarella cheese.
- 3.Arrange seasoning grouper fillets with salt and pepper in a single layer in a 9 x 13 inch baking dish.
- 4.Spread the crumb topping evenly over the fish.
- 5.Bake for 30 minutes in the preheated oven, or until fish is easily flaked with a fork. If you have thin fillets, you may broil for 10 minutes instead of baking.

- Place fillets on a foil-lined 15x10x1-in. baking pan. , In a small bowl, combine the lemon juice, marinade for chicken, seafood seasoning and oil; brush over fillets. Broil 4-in. from the heat for 6-7 minutes on each side or until fish flakes easily with a fork., Meanwhile, for sauce, in a large skillet, saute the onions, red pepper, green onions and garlic in butter until tender. Stir in flour and seafood seasoning until blended; gradually add cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Gently stir in crab meat; heat through. Serve with fish. Steps:
- Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
- Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
- Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

Steps:
- Add essence ingredients together and mix well, can keep in well sealed jar for 3-6 months.
- Heat oven to 400.
- Mix butter, oil, parmesan and essence in small bowl, whisk till smooth.
- Brush generously on fillets.
- Bake for 15-20 minutes, basting fish with sauce a couple of times.
- Top with herbs in last 5 min of cooking, cook till fish is flaky.
- Sprinkle with lime juice.
- Serve.
