- In a large skillet, combine the apples, sweet potatoes, ham, brown sugar, salt, pepper and curry. Cook over medium heat until apples are crisp-tender; drain. Combine cornstarch and apple juice until smooth; stir into apple mixture. Bring to a boil; cook and stir for 1-2 minutes or until mixture is thickened. , Transfer to a greased 2-qt. baking dish. Cover and bake at 375° for 10 minutes or until sweet potatoes are tender. Meanwhile, in a large bowl, whisk together the pancake mix, milk, butter and mustard; pour over ham mixture. , Bake, uncovered, for 25-30 minutes or until puffed and golden brown.

GLAZED HAM WITH ROASTED APPLES

- Preheat the oven to 325 degrees F. Score the ham with a paring knife through the skin and fat in a tight crosshatch pattern. Place the ham, fat-side up, in a large roasting pan. Bake 1 hour, 30 minutes.
- Make the glaze: Whisk the apple butter, mustard, brown sugar, vinegar and cloves in a bowl until smooth. After 1 hour, 30 minutes, brush the ham all over with some of the glaze and bake 20 more minutes. Add the apples to the pan, cut-side up, and bake, brushing the ham with more of the glaze every 20 minutes, until the ham is crisp and the apples are tender, 1 hour to 1 hour, 30 minutes. (Turn the apples cut-side down in the last 20 minutes.)
- Transfer the ham to a cutting board and let rest 15 minutes before carving. Serve with the roasted apples.

- Mix mustard and vinegar together; spread thinly on ham.
- Spread apples in two layers on ham; sprinkle well with brown sugar.

BAKED FRESH HAM WITH APPLE-CRANBERRY SAUCE

- Preheat oven to 300 degrees F.
- Score fat and put ham, fat side up, in a roasting pan. Rub with extra-virgin olive oil and season with plenty of salt and pepper all over. Cover loosely with foil and roast for 2 hours. Remove foil and roast for final hour uncovered.
- In a large saucepan add all the sauce ingredients and simmer for 25 minutes until apples are almost falling apart and the sauce is fragrant. Remove cinnamon stick, bay leaf, and ginger then puree in a blender until completely smooth. Serve with baked fresh ham.
COUNTRY HAM AND APPLES

- Soak apples in water overnight. Next day, place ham in simmering water and cook further until soft. Add apples and brown sugar. Cook for 1 hour. For dumpling, beat the egg, butter and milk. Sift dry ingredients and add to mixture. Use milk to stiff batter.
- Drop dumpling dough by spoonful into boiling ham and apples. Cover tightly for 15 minutes. Serve immediately.
SUGARCANE BAKED HAM WITH SPICED APPLES AND PEARS

- Preheat the oven to 350 degrees F.
- Line a shallow baking pan with parchment or waxed paper. Insert the sugarcane sticks into the ham at 3 to 4-inch intervals. Tie the ham, using kitchen twine, horizontally and vertically, like a package, to hold it together. Place it on a wire rack in the baking pan.
- In a mixing bowl, combine all of the glaze ingredients together except for the mustard and water. Mix well. In a small bowl, dissolve the mustard in the water, then add to the spice mixture. Blend well.
- Brush the entire ham with the glaze, coating it evenly. Wash, core, and halve the fruit. Place all around the ham. Baste the ham a second time and baste the fruit with the glaze. Bake for 45 minutes. Baste the ham and fruit again. Bake another 45 minutes. Remove the ham from the oven and let it rest for 5 minutes. Remove and discard the string and swizzle sticks. Serve the apples and pears on a platter with the ham. Serve everything warm or at room temperature.

- 1. Preheat the oven to 325 degrees. 2. Score the skin on the Ham in a diamond shape pattern. Insert the Whole Cloves into the skin. 3. Place the Apple Slices in a single layer in a 9 x 13 baking dish or roasting pan. Then set the Ham cut side down on top of the Apple Slices. 4. Whisk together the Syrup and the Mustard in a small bowl. 5. Brush the Syrup mixture over the entire skin on the Ham 6. Next we are going to add the Apple Cider to the bottom of the pan. A little tip, set the pan on the rack in the oven, then pour the Apple Cider in the bottom of the pan. It helps to prevent spilling the Apple Cider. That would be a mess to clean up in the oven! 7. Place a tent of foil loosely over the top of the Ham. This helps to retain the moisture in the pan which in turn keeps the Ham moist. 8. Bake the Ham for 1 & 1/2 to 2 hours. Look for an internal temperature of about 140 degrees. All ovens cook differently so have a meat thermometer handy and start checking the temperature at about 40 minutes to ensure you are on track with your cooking time. Remember this style of Ham is cooked, so in essence we are just warming it up and giving it a flavor boost. You don't want to serve a dry overcooked Ham.

- Remove rind and trim off all but 1/4-inch of outer fat. Cut ham into two serving pieces. Score the fat edge at 1-inch intervals so the steak does not curl during cooking.
- Lightly saute, ham on both sides in butter for 3-4 minutes a side. Remove ham steak to a plate and keep warm.

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

- Set oven to 325 degrees.
- Place the ham in a roasting pan and bake until a thermometer reads 150F (about 15 minutes per pound).
- Cool the ham completely (you can cover and refrigerate the cooked ham up to 2 days ahead).
- In a saucepan bring the apple cider and dried apples to a boil over medium heat.
- Boil until the liquid is reduced to about 1-1/2 cups (this should take about 8-10 minutes).

- Spoon the sauce over the slices.

A fast easy put togeather in the morning or the night before. I am always looking for new ways to use my crock pot and this one came togeather on the first try. Its cleans up in a snap with slow cooker lining bags the apples blend in really well with the ham and carrots and my kids love it. It makes a great sunday supper without a lot of fuss.

- Bone in ham has best results, if making a turkey ham or processed ham roast reduce the cooking time by about an hour.
- Wash apples and carrots, core and slice apples into wedges, I use an apple slicer that does both. Place in bottom of crock pot add liquid and sprinkle with spices. Place Ham on top of carrots and apples. If you prefer you can glaze the ham with brown sugar or crushed pineapple. Cook on High 4-6 hours or on Low for 10 hours.
- I like to serve with crossiants and a steam in the bag veggie mix.
