BAKED WALLEYE
We live very close to Lake Erie, which is nicknamed the "Walleye Capital of the World." I'm always looking for new recipes for this fish ... I came up with this baked walleye dish on my own. -Joyce Szymanski, Monroe, Michigan

Steps:
- In a small saucepan, bring the first eight ingredients to a boil. Reduce heat; simmer, uncovered, until vegetables are crisp-tender, stirring occasionally., Place fish in a greased 13x9-in. baking dish. Pour vegetable mixture over the fish. Cover and bake at 350° for 15-20 minutes or until fish flakes easily with a fork.

FLASH BAKED WALLEYE FILLETS
Steps:
- Preheat an oven to 500 degrees F (260 degrees C).
- Pour the melted butter into a 9x13-inch baking dish. Place the fillets into the butter, skin-side-down. Sprinkle evenly with lemon pepper and basil.
- Bake in the preheated oven until the fish is opaque and easily flakes with a fork, 5 to 7 minutes.

BAKED RANCH WALLEYE
This is my favorite recipe because the fish is creamy and moist, but you still have a little crunch from the croutons. My daughter loves it. She would never eat fish without it being fried but loves this recipe.

Steps:
- Preheat oven to 375. Lightly grease or use baking spray to the baking dish/pan.
- Generously spread the ranch dressing on all fillets. Generously put crushed croutons on top of the ranch dressing. Bake for 25-30 minutes. Make sure the fish flakes apart easily in thickest part of fillet.
- Let sit for 1 minute. Serve and Enjoy!
BAKED WALLEYE WITH SHRIMP RECIPE - (4.5/5)

- In a wide, shallow bowl, beat together the egg and the water. On a plate with a rim, combine the flour, salt and WHITE PEPPER and mix well. Put the bread crumbs on a second rimmed plate. Sprinkle the fillets with LEMON PEPPER, MUSKEGO AVE. or SUNNY SPAIN (if using). Dip the fillets in the seasoned flour, then in the egg wash and then in the breadcrumbs. Heat the oil in a large, heavy frying pan. Fry the fillets, being sure not to overcrowd, until nicely browned on both sides. Undercooking is better than overcooking. Set all the cooked fillets aside and keep warm. In the same pan, drain off the vegetable oil, trying to leave any browned bits in the pan, and melt the butter. Sauté the onions, celery and peppers until soft and set aside. Cook the shrimp until done in the same pan. Put the veggies in a baking pan; add the shrimp and then the walleye fillets in one layer. Sprinkle with cheese if desired. Broil for a few minutes to melt/brown cheese or just to crisp everything up and serve immediately.

Dip both sides of fillets in flour mixture and eggs, then coat with potato flakes. , In a large skillet, fry fillets in oil for 5 minutes on each side or until fish flakes easily with a fork. Serve with tartar sauce and lemon if desired.
