APPLE CIDER SPICED OATMEAL

This oatmeal is hearty, sweet, and healthy because it receives its sweetness from apple cider instead of added sugar. I love putting cranberries or fresh fruit in it and sometimes a bit of maple syrup.

  • Lightly oil four heatproof ramekins, then divide the batter between them. Bake for 20-25 mins, or until well-risen and the baked oats spring back when lightly pressed. Scatter with more chocolate chips or berries before serving, if you like.

Steps:

  • Peel potatoes if the skin is tough, otherwise, just rinse and pat dry.
  • Cut potatoes into thin slices, but not all the way through. (A clever trick for doing this is to place your potato between two table knives--the knives will stop your cutting blade at an even level across potato).
  • Place potatoes in a microwave safe dish or pan.
  • Sprinkle with melted butter and chopped herbs--getting it down between slices.
  • Microwave for 10 minutes, rearranging potatoes after 5 minutes.
  • Check doneness and cook a bit more if necessary until potatoes are nearly done.
  • Sprinkle with grated cheese and Parmesan cheese.
  • Microwave for another 4 to 6 minutes until cheeses are melted and potatoes are soft.

Steps:

  • Mix together and pour into an ungreased 9 x 13 baking pan. Bake at 350 degrees for 30 minutes or until golden brown. Can be assembled ahead (overnight) and baked later.
  • I usually alter the fruit ingredients - depends on what I have on hand. Also, you may need to add more or less apple juice (start with 4 Cups and adjust from there) - don't want it too runny nor too thick.

Nutrition Facts : Calories 96.4, Fat 1.1, SaturatedFat 0.2, Sodium 3, Carbohydrate 19.7, Fiber 1.6, Sugar 9, Protein 2.5

3 cups raw rolled oats
5 cups apple juice (I use the spiced apple juice from Trader Joe's)
1 teaspoon honey
1 teaspoon cinnamon
1/2 cup raisins (optional)
1/3 cup sliced almonds (optional)
1/3 cup dried cranberries (optional)
1 apple, diced (optional)
1 pear, diced (optional)
