APPLE CIDER SPICED OATMEAL
This oatmeal is hearty, sweet, and healthy because it receives its sweetness from apple cider instead of added sugar. I love putting cranberries or fresh fruit in it and sometimes a bit of maple syrup.

Steps:
- Peel potatoes if the skin is tough, otherwise, just rinse and pat dry.
- Cut potatoes into thin slices, but not all the way through. (A clever trick for doing this is to place your potato between two table knives--the knives will stop your cutting blade at an even level across potato).
- Place potatoes in a microwave safe dish or pan.
- Sprinkle with melted butter and chopped herbs--getting it down between slices.
- Microwave for 10 minutes, rearranging potatoes after 5 minutes.
- Check doneness and cook a bit more if necessary until potatoes are nearly done.
- Sprinkle with grated cheese and Parmesan cheese.
- Microwave for another 4 to 6 minutes until cheeses are melted and potatoes are soft.

BAKED OATMEAL
My sister-in-law brought this recipe when she came to visit. She made it for us one morning for breakfast, and it was great. We have been making it ourselves ever since. It is a very flexible recipe.

Steps:
- Mix together and pour into an ungreased 9 x 13 baking pan. Bake at 350 degrees for 30 minutes or until golden brown. Can be assembled ahead (overnight) and baked later.
- I usually alter the fruit ingredients - depends on what I have on hand. Also, you may need to add more or less apple juice (start with 4 Cups and adjust from there) - don't want it too runny nor too thick.

AMISH BAKED OATMEAL
I got this recipe from a bed and breakfast in Amish country of Pennsylvania. My family is Pennsylvania Dutch, so we were out there almost every summer. It's a great, filling breakfast. Serve with fresh or canned peaches and a splash of milk or half-and-half.
