BALSAMIC MARINATED TOMATO AND MOZZARELLA SALAD
A perfectly simple salad marinated in a combination of olive oil and balsamic vinegar and kicked up with onion, garlic and basil. The longer it sits, the better it gets. Also great served over pasta.

KITTENCAL'S TOMATO-MOZZARELLA SALAD WITH BALSAMIC VINAIGRETTE
This is a must-make with your summer's crop of tomatoes and fresh basil --- prepare the vinaigrette firstly as it needs a few hours to blend the flavors together and may be doubled if desired --- to take this to yet another level use fresh buffalo mozzarella cheese --- I have served this wonderful salad to a crowd of people many times in the past and also placed Italian cold cuts all around the edge of the platter :)

Steps:
- For the dressing; in a bowl or in a processor whisk/blend together the minced garlic with salt, Dijon mustard, honey and balsamic vinegar.
- Add in olive oil in a slow steady stream until emulsified.
- Season with black pepper.
- Chill for a minimum of 2 hours before using (shake before using).
- TO ASSEMBLE THE SALAD; on a large serving platter alternate the tomato slices with the mozzarella cheese slices.
- Drizzle the balsamic vinaigrette over all.
- Sprinkle with salt and freshly ground black pepper.
- Sprinkle with chopped fresh basil.
- Delicious!

ROASTED TOMATO AND MOZZARELLA SALAD WITH BALSAMIC REDUCTION
A divine dinner starter that's fancy enough for guests (it's even one you can make ahead). I thought this one up last night, tried it today and it worked well. It is a stacked caprese salad with a twist.

Steps:
- Preheat broiler to high.
- Slice your tomato into 6 even slices. Place on a cookie sheet (or roll pan). Drizzle tomatoes with small amount of olive oil and lightly dust with Italian spices, salt and pepper.
- Broil tomatoes for 3-5 minutes (until they are just slightly softened), set aside to cool to room temperature.
- Bring vinegar to a boil, then decrease heat to medium and simmer for 5-10 minutes until reduced by half. The thickness of the reduced sauce depends on the quality of your balsamic vinegar. Place vinegar in the fridge to cool for 15 minutes.
- Slice your cheese in similar size slices as the tomatoes.
- On each plate, stack 3 tomatoes and 3 slices of cheese (alternating one on top of each other). Drizzle balsamic reduction over and around the stacked salad, sprinkle plate (not the salad) with chopped basil and then place one sprig of basil on top of the stacked salad as a garnish.

- MARINATE: Combine the olive oil, lemon juice, grated garlic, salt, red pepper flakes in a bowl and stir until mixed. Add 1 -2 torn basil leaves to the mix along with the mozzarella. Cover and allow to sit at room temperature for at least 1 hour and if possible, cover and refrigerate for 24-36 hours.
- TOMATOES: An hour before serving, add the tomatoes to a medium bowl. Remove the mozzarella from the marinade and add to the tomatoes (don’t toss out the oil!) Add the torn basil leaves, along with another big pinch of Malden salt and drizzle roughly 2 tablespoons of the oil on top and toss to combine. Allow the salad to marinate for 1 hour before serving. Taste and adjust with additional marinade oil or salt if the salad needs it before serving. Drizzle with homemade balsamic glaze and serve!
